I never understood the praise for Adventure Island. It’s just a knockoff Wonder Boy Hudsonsoft created when trying to port Wonder Boy on the MSX. This game looks quite nice though, and that Yuzo Koshiro soundtrack is icing on the cake.
Since each series diverts significantly after the first game, it's more proper to call it a spinoff series. The focus is on island-hopping vs. the more fantasy-esque atmosphere of WB. The core AI series (on NES) also focused much more on simple action than on the RPG elements that WB was known for. The arcade-style gameplay is what gained the series fans over time. Plus a lot of people like the dinosaur riding mechanics included in many of the games. It wasn't until Super AI 2 that it truly resembled what WB was known for. The short answer is that some people simply preferred the Island motifs to the Fantasy ones.

They certainly didn’t use the standard devkit instruments for the SNES (GOOD, but I figure Yuzo Koshiro would know better)
