    I’ve had this many times a long time ago. In 1973-1975 I lived near Adana and for over a year in a small village. Our neighbor was the village butcher. His daughters tended the flock during the day. His wife would often prepare a guvec pot and take it to the nearby bakery (wood oven) and let it cook there for a few hours. We ate with them many times and they with us. This video brings back very fond memories of simpler times, all natural food, and wonderful people. My wife and I often prepare a meatless version of your recipe and have for a number of years. We don’t have a guvec, but we know to layer the food and let it cook slowly without uncovering or stirring. It always turns out so good and the eggplant is our favorite part.       DeBo I’m a Turkish person and I live in Adana. Mediterranean’s food is really good. Especially Adana’s dishes... I hope you enjoyed living there. And you should taste Adana kebab one day if you didn’t before:)

    Hi, Thank you for the recipe, it looks delicious. Regarding spices, is it just salt that you add to this dish please? I've seen a number of other guvec recipes and cumin seems to be quite a popular spice to add as well as chillies. Can you advise if it is worth adding other spices and chillies please?

      I use a spice mix, which shown at 1.12 of the video. It includes salt, black pepper, sweet paprika and cumin.

    O man, that looks so delicious!! The earthenware pot looks a bit like a Korean dolsot (made of agalmatolite), btw.

    Am going to Istanbul again, anyone know a good place to buy a guvec pot? Last time saw near Egyptian bazaar but next day the seller had gone, thanks in advance.
