LUNCH RECIPE//
INGREDIENTS:
1 lb ground beef
Shredded lettuce
Coleslaw (shredded cabbage and carrots)
Basmati rice
Chopped green onions
Chopped cilantro
Diced avocado
Olive oil (and canola oil, I only used olive oil)
Coconut oil (or whatever oil you prefer)
Salt and pepper
*Optional - Chopped parsley
*Optional - Lime
DIRECTIONS:
1. Mix together shredded lettuce, coleslaw, olive oil (and canola oil, I didn't use) and salt, put aside
2. Cook rice according to instructions on bag
3. Cook beef in skillet with coconut oil, salt and pepper
4. Chop green onions and cilantro and dice avocado
5. In a bowl, mix lettuce, rice, ground beef, green onions, cilantro, avocado, olive oil and salt
*You can add chopped parsley and a squeeze of lime too

The southwestern salad is one of my go tos for a quick lunch! Tossing the dressing and just using olive oil & salt is probably way healthier. I need to adopt that habit 😅 Now I want to pick up a berry box - so cute and aesthetic!

Lemon and cucumber water is a must, I feel like not a lot of people add cucumber to their water but I love it!! How fun that your friend lives so close, yesss when I was in college I could not study at home!! I had to go to a coffee shop or anywhere else to actually so my work! The rooftop views 😍 I would love to look at that during sunset! Your nude tank is too cute, it looks so comfy too! I love the ceramic egg carton, adorable!!

I have only flown through Dallas airport but I totally want to check it out sometime! You make it look so nice! I also really like to get work done at Starbucks and I love your rings you are wearing! I honestly cannot wait to move back to the states and start shopping at Trader Joe's again, this haul definitely made me miss it - especially macro bars!
