I studied Pastry and Baking Arts in college and we would have to have our quantities down to the gram. It's all about accuracy. Cup measurements don't give you that.

Easiest hack for my favorite cookie. I use the Toll House cookie recipe as is but I add a teaspoon of water and about a 1/4 teaspoon extra of baking soda. I add a ridiculous amount of chocolate chips and walnuts, basically a full bag of each. I use an ice cream scoop to portion it and bake until golden brown and rest until just slightly warm before I start devouring them. For some reason that small amount of water helps the texture and moisture, I don't know why, I just read it in an old cookie recipe. The extra baking soda helps add extra structure for all the chocolate chips and walnuts I add. What you end up with is a solid but chewy cookie full of chocolate and walnut every single bite, 2-3 of them is damn near a meal, especially when you have some milk (or milk alternatives) to dip them in. These cookies are around the same size diameter wise but thicker but so satisfying and it takes no extra work...but the little bit of water and baking powder makes a noticeable difference. I was going to make them this week but the grocery stores are all out of flour and brown sugar, empty shelves everywhere. They'd make a good survival food though, while high in sugar they will have protein and carbs.
The water would make more gluten develop, which gives structure. The baking soda does not add structure, it adds or expands air bubbles which gives a lighter feeling.

I did the molasses hack when I ran out of brown sugar once and I'm never going back to regular brown sugar. it adds such a richness and chewiness to the dough that I wasn't getting with the same recipe before I'd tried it. So yummy!!
