    Lovely burger.
    I never had a pepepr crusted burger. But pepper crusted steak is a favourite so i think you are right it would be great. I need to try it :) and no bacon? Hehe

    i love my blue chefs burgers. i have never had a pepper crusted burger. but i have had love my pepper bacon so this is a must try

    This is really good. Great flavor combo here. I like how you put the blue cheese in the meat mixture instead of on top at the end. The flavor must have been intense. YUM!!!

      Me too Ted, HA-- I’m a slim 250 myself. Being Italian i spend half my life in the kitchen. We have fall and winter coming up and that’s when i really get going with my Italian Cuisine

    I would love that burger, because I love blue cheese and it pairs so well with the beef! That can stand alone by it's self for sure!

    2 thumbs up! I’m definitely going to try the pepper crust on my next burger. The mixture of blue cheese and onion and ground beef is interesting. Wondering how caramelized onions would be on top.     I like to make black pepper ketchup for my French fries. It’s 50/50 mix of pepper and ketchup with a dash of Tabasco sauce. You oughta try it.

    Going that far...I'd be tempted to just make a flat out pepper dredge to get full and utter coverage and never look back as I flee into the setting sun.

    Why do you run your vortex inverted under your cast iron pans? Just don't need the higher heat? I run it small side up under my cast iron pan when doing smash burgers. Have not done regular burgers yet but, definitely would not need that volcanic heat for them.

    While I fully appreciate how a cast iron pan creates a crust on meat (or anything else you want with a good char), I strongly prefer cooking directly over charcoal when using the grill. I use GrillGrates to tame the flare-up one might get from dripping fat, but I feel (and it may be just my subconscious) that I get a better charcoal flavor that way.
    Other than that, it looks really yummy. When you finish, is the onion still crunchy, or has it sauteed and softened in the beef fat?

      I cook over coals as much as cast iron--I'm just a cast iron junkie :) The onions are basically melted in there. No crunch, just the flavor left behind :)

      The fine dice really breaks them down and prepares them for cooking in the fatty meat :)

    Great job, i love the 73/27. I like my burger a Little less cooked. Maybe about an internal temp of 140 degrees.

    Be careful Ry. Someday you are going to be as famous as Rachel Ray, and my wife and I loved to joke about when she would say "Now for a little E-V-O-O; that's Extra Virgin Olive Oil" and wonder "Why abbreviate it if you are going to say it every time!
