It's bout the pressure, at first when the water is poured, the guy had been chocking the straw under there to keep the pressure and also that the water don't spill. On closing the the bottle, the pressure inside is tight and the water doesn't flow out until the pressure decreases

To make it work you have to make the bottle air tight by gluing the straws with a glue gun. Or else it will not work
