Completing the bonus stage killing more than 30 targets gives you an extra life, that's what the extra lives are in this game. You regain all health in the same place as you die.

How do i change weapons?

First you need to pause the game. Then I don't remember if you had to press the d-pad or select, but the thing is that the weapon change is on the pause menu.
