Chef Kris Makes Shepherd's Pie | Lodge Cast Iron Recipe of the Month

- Our March 2024 Recipe of the Month is a St. Patrick’s Day favorite that’s perfect for weeknight meals or dinner parties alike-just check out those glorious, piped mashed potatoes! While we make ours with lamb, feel free to substitute lean beef if it’s easier to find. And when it comes time to serve this to your crew, don’t forget to pair it with a nice stout and some Irish soda bread. Sláinte!
Ingredients Needed-
1½ pounds lamb, minced (substitute lean beef if you prefer)
1 tablespoon olive oil
1 large yellow onion, finely diced
2 carrots, peeled and diced
4 cloves garlic, minced
1½ cups peas, frozen
2 tablespoons tomato paste
1 cup beef broth
1 cup Guinness stout beer
1 tablespoon Worcestershire sauce
1 teaspoon thyme
1 teaspoon rosemary, finely chopped
Salt and pepper to taste
2½ pounds russet potatoes, peeled and quartered
¾ cup (1½ sticks) Kerrygold salted butter, cubed
2 teaspoons salt
¾ cup heavy cream, warmed
1 teaspoon garlic powder

Hi, Kris. Great recipe. Wondering if sometime you will use the Lodge silicon hot handle holder. It took me a while to remember that I have one. Now, I really like using it.
Chef Kris typically prefers to use our square silicone pot holders to protect his hands from the heat of the pan, but the silicone handles are great too!

Did you use the EVOO? Saw bottle there. Missed when you added it. Did you decide to use only the lamb drippings to cook vegetables? Also, when is garlic powder and 4 cloves of fresh garlic added? Do both go into garlic mashed potatoes or does one go into the lamb mixture in skillet? Enjoyed video. Would like to try this. Thanks.

Have you ever tried cream cheese in your mashed potatoes?
A little Cream Cheese in Mashed Potatoes or in Potato Soup, really adds to the dish! Flavorful, rich and creamy! Nobody knows what it is; but the oooh’s & aaaaaah’s!!! I always have it on hand~ 😋

That's their "sizzle' oil and is what Chef Kris uses in the recipe for cooking 💛
