Uhm most people book flights cuz they need to go somewhere, not cuz they want the _experience_ for views. If you're flying somewhere on a Monday to be at a conference on Tuesday, you can't rebook on Wednesday, just like if you're flying back from vacation on Monday to be back at work ok Tuesday, there are financial consequences for being delayed.
This accommodation only fits a certain niche, and it's not any major demographic. Middle/upper middle class people who splurge won't be able to take extra days off work or miss the events they're flying to, rich people would pay for an equivalent alternative.

There’s no way to say that it’s ok to still charge full price for the higher level of service.

Qatar Airways are terrible to their staff.
A friend of mine had a sister who was hired by them. While training her, they looked through her medical history and fired her for something that was on her medical history. I forget exactly what it was, it was something private but nothing that made any sense, I think it was something for being diagnosed with depression. She was a person who had done a lot to change and better herself too.

I will never go on Qatar again Q suites, cancelled paid for seats, no refund. Special meal selected months before and they did not have it, broken seat and a 30 minute wait in the heat on the boarding bridge. Can do without that at the price!

no they won't. They downgraded my seat to economy for no reason and waited for me to contact them to get refund, which took them over a month to reply my email. After 4 months I finally got back the money the OWED ME!!!! thank god. And they force me to sign a "voluntary no compensation" letter otherwise I won't get any refund.

Its good to listen to the people.. QE had a huge critic but he wasnt anti-royalist, he was actually a monarchist and she met with him and he gave her a list of changes needed by the royal family and she instituted almost all of them and they say that it really help save the royal family because they public thought they were relics.. I think this was in the 60s or 70s.. Its good Qatar listened.

Qatar airways completely ruined our Maldives once in a life time holiday, mine and my husbands 50ths and grandad 13th.
Booked through Tui with Qatar Airways being our transport there and back. 2 weeks before we got an email saying our flight had been moved by 15minutes did we still want to continue? Emailed back saying it was fine. Following day phone call from Tui rep saying the flight had been cancelled, the only way we could still go was to pay nearly £2000 more to fly with Emirates! Ended up cancelling the holiday

All Airlines cancel flights on a daily basis for a myriad of valid reasons. I doubt that the airline cancelled yours to ruin your "once in a lifetime holiday" that you decided not to go on anyway when you had an alternative choice.
