Yes no need to use any other yeast. If you are preparing this process then please maintain the temperature because in winter yeast process also take time to prepare due to cold. For my suggestion start after January

S.P GURM wine making k bahut saray process hai. Ya ho maynay process post kiya hai ya Italian style process hai. Ismay airlock nahi hota hai. May jald hi red wine with air lock ka process post karnay wali hu. It’s take 5 days Ismay airlock lagana hoga
Basically airlock is for co2 to escape out of jar and not let fresh oxygen go inside.. If you open the fermentation frequently taste will be affected. Stiring is required if there is fruit pulp floating on surface or thete is doubt of fermentation stopped.
Dharmesh Asher oxygen needed if fruit pulp float on top. Now it’s depend which fruit you using. If you using juice then no need of stirring but if you adding pulp then definitely need stir. Different recipe has different technic.

Dharmesh Asher baker yeast is use only on baking only. And this wild yeast use for wine. As baker yeast has maida / whole flour and wild yeast is full of fruit enzyme which helps wine perfect. If you use baker yeast on wine then after bottling the wine you get smell of bread, as baker yeast is using for baking only. Hope now you understand

And wine yeast goes upto 18% and turbo yeast goes upto 28%. But wine yeast & turbo yeast not available in india. That’s why I recommend wild yeast if you want strong alcohol

As an interested person I have conducted an exhaustive search for scientific papers related to yeast substitutes if they do exist . While there are established substitutes for baker’s yeast there does not seem to any for wine yeast. However, industrial producers of biofuel in the form of ethanol which is the ordinary alcohol found in wine use rice bran as a yeast substitute for fermentation of corn mash. Rice bran in India is fed to cows and goats and is about one third the cost of wine yeast. I have conducted many experiments using rice bran powder in attempts to ferment grape for wine making but have found that rice bran has absolutely on effect on grape mash. But my experimentation has yielded a positive result in that using rice bran as a yeast nutrient reduces primacy fermentation time to about one third or one quarter. Would it be possible for you as a greatly experienced wine maker to try out rice bran as a yeast nutrient? Amateur wine makers and professionals also have searched for substitutes for wine yeast but all attempts have as yet not yielded any results. As an interested person I have conducted an exhaustive search for scientific papers related to yeast substitutes if they do exist . While there are established substitutes for baker’s yeast there does not seem to any for wine yeast. However, industrial producers of biofuel in the form of ethanol which is the ordinary alcohol found in wine use rice bran as a yeast substitute for fermentation of corn mash. Rice bran in India is fed to cows and goats and is about one third the cost of wine yeast. I have conducted many experiments using rice bran powder in attempts to ferment grape for wine making but have found that rice bran has absolutely on effect on grape mash. But my experimentation has yielded a positive result in that using rice bran as a yeast nutrient reduces primacy fermentation time to about one third or one quarter. Would it be possible for you as a greatly experienced wine maker to try out rice bran as a yeast nutrient? I am sure this finding would be mo re than welcomed by wine makers possibly even professional wine makers. So please do reply and I look forward to your comments in English if that would be possible.
