Oh my! My mother is from St. Lucia and I remember eating tamarind balls as a child. They're so good that I literally at the whole pack that was bought for me.
Iam from Barbados..but my dad would always bring me back the Tamrind balls when he would travel to Trinidad and Tobago.Now I live in Occupied East Jerusalem and was making a dish thats called mashi Jazzer (stuffed carrots) and we use tamrind in the sauce...so now I can use the left over tamrind and make my childhood favorite sweet!!! Thank you so much!!!!!!
Just looking at her hands tell me that everything she cooks is DE BESS! Girl my mouth watering! My mom used to pre mix it the night before and sprinkle some salt in it to balance out the sourness. The next day she'd add more sugar and finish up.
I love absolutely Tamarind Balls, the lady used to make them with Demerara sugar (I think, it’s been a few decades 🤔 ) which has more flavour than white sugar, she used a tip of salt and vanilla essence and black pepper which gave it a little kick…delicious 😋. If only I could get fresh-ish Tamarind here in the UK, they are so dry, guess I’ll just have to look harder 😂.

This is an all time favorite for me and my family here in Jamaica. I sometimes knead, add a bit of rum put it into a jar and have it all year round

Yes they are left in so when you suck on the seed it has some firmness to it. Then you chew it off the seed
