Potato and Sausage Egg Bake.

For this recipe I used:
3 cups of potato pieces
2 Italian sausage links
6 eggs
garlic chives
1.5 cups shredded cheese
1 cup cottage cheese
The potatoes and sausage were already cooked. I cut them into bite sized pieces and added the remaining ingredients.
I choose to bake mine in a 9x9 cake pan at 375F for 40 minutes.
Let rest for 5-10 minutes before serving.

Absolutely love sausage egg and potato bakes. Casseroles are delish. The addition of cottage cheese is a beautiful touch!
