Pumpkin Pecan Bread Pudding.

Preheat oven to 375F
3/4 cup pumpkin puree, pure
2 large eggs
1 cup milk
1/2 cup heavy cream
1/4 cup melted butter
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ground ginger
1/2 cup brown sugar
pinch salt
1/2 cup chopped pecans
7 cups cubed bread. At least a day old. I used french bread but a dense bread like brioche would work too.
Grease a 8x8 pan and mix together all of your first ingredients. Pour over the bread cubes and mix gently. Pour into the baking pan and let sit for 30 minutes. Bake in the oven for 30-35 minutes then check for doneness. I put mine back in for an additional 10 minutes.
If you are a food network geek like me, you know that nearly every contestant that has tried bread pudding in 30 minutes gets chopped because it won't cook that fast!!!
I topped mine with store bought caramel sauce but feel free to make your own. A tiny few pieces of flaked or coarse salt and your desert will be over the top GOOD!

    I subscribe to our local library online and I am addicted to reading through cooking magazines. 😂 Food Network, Taste of Home, Better Homes and Gardens and Canadian Living are just some of the magazines I either subscribe to or read, all for FREE!     This cake is easy to make and a great way to use up some zucchini from your garden or what your neighbour has gifted you. I suggest a buttermilk substitute in the description if needed.     This is the casserole that most people associate as a Christmas morning breakfast meal. We have this dish for breakfast during the busiest days here at the farm. The first time I had this was in May of 1993, 5:30 am the morning of my first branding ever at the farm. My mother in law made 2 huge pans of this to feed a crew. I can remember thinking this was the yummiest food I’d ever eaten. I could have easily eaten half the pan. 😂 Over the years I’ve tried my own version of this and it never turns out the same. I don’t know where the original recipe came from but the best of bridge recipe is pretty close. This recipe doubles and triples well, freezes well and reheats well. Thanks for watching, Annette🌺

    HELP. The last month ive saved all my beef and bacon drippings in a pan. I've kept them on the top shelf in the refrigerator so they were Stone Cold hard. I need to know what to do to melt it down and save the good from the bad?

      @@jamesjustice859 hi James. Beef fat and pork fat drippings make different rendered products to the best of my knowledge. I don’t have any experience with these fats when they are mixed… I would put them in a pan and heat them up and clean out the debris once it is good and hot. Store the cleaned up fat in a jar in the fridge. We keep our bacon grease separate and just use it right out of the jar for hash browns or in biscuits. I hope that helps.

    Tallow color is subjective to the diet of cow. Pasture raised cattle, no matter how much washing you do, will never fully release the yellowish tint, unlike unhealthy grain sourced beef that is snow white. White does not equal pure in this one case.

    You probably want to minimize the dishes used and avoid spillage because tallow is very hard to clean up, especially if you used kidney suet. It melts at 115°-120°. A wire mesh strainer is particularly hard to wash. Lard is much more forgiving. I don't even want to touch tallow because of it. Pour it into jars if you want low surface area for oxygen. Those freezer bags are more expensive than the tallow, and are not convenient to open to take out a chunk.

      Thank you for your comment. I’m afraid to use glass jars because it is so hard and I don’t want to heat it up just to get a little or risk breaking it by chipping out some tallow. Hot water and soap is really good at cleaning up any spilled tallow I have found. I make the vacuum seal bag a little bigger and just re seal it after I take out what I want. It is expensive but we tend to use that method of storage for longer term freezer packages. We make tallow because we raise beef not pork that we would need for lard. Take care, Annette🌺

    Thanks for the new recipe Annette - I'm stumped for tonite - I don't have the biscuits and town is over an hr away - so just good old instapot chicken breast and gravy tonite. Thank you for telling me about the mashed potatoes and years old no less! have your biscuits ever burned using the water, and I agree - cheese does make life better - and dogs make up for mean people.!

      Thank you! My goodness you live far from town. We are only a half hour round trip. I only put the water in the empty muffin cups and they did not burn. Operation freezer clean out is in full swing here. I need to make room for new produce. lol Dogs are the best!!! Have a great week. Take care, Annette

    Cauliflower steaks are amazing. Oooh brown sugar. Love making stuff with cauliflower. It’s a great tasting veggie! Love this! What a great meal!

    The crispy browned spots on the cauliflower must make your dish pop with flavor. My mom would caramelize cauliflower florets in a light coating of mayonnaise, medium heat in the cast iron skillet on the stovetop until golden brown.....food for kings!! I use mayo for crisping lots of dishes. Cauliflower compliments honey as well. I added about 1.5 cups of steamed cauliflower into my spaghetti sauce, some of the best spaghetti I ever ate!!       Thanks so much! Cauliflower really is very versatile. Crisping in mayo is not something I’ve done though it has been part of baked sauces I’ve made. I’ll give it a go! Take care. 🌺

      @@annetteh.thefarmwife.2397 Try substituting the butter for mayo on a grilled cheese sandwich. Just a thin layer of mayo on the bread makes for perfect crisp grilled cheese sandwiches....no butter needed!

    Good idea on the containers, however, I use Tupperware and I don't have to line it with wax paper and can pop it right out because the container is flexible.

      Good idea. I used to sell Tupperware and have lots of stock. I will have to look for something flexible. Most of mine are hard plastic. A little run under hot water and they’d come right out though. Take care, Annette🌺

I'm glad you show me how your mind works - I sort of adhere to the recipe and it's sometimes difficult to know what can be substituted.       Thanks Lisa! I am totally guilty of loving the taste of a Big Mac but I don’t need to eat 590 calories for just a burger….😂😂 Years ago a friend at work suggested making it into a salad and I love it! It’s the sauce though that really makes it. Take care friend! Thanks for always being here. 🌺🥰
