Hey! I'm Annette, and this is a channel about my life as a 5th generation farm wife.

Fried Potato Balls.

One vegetable we grow a lot of is potatoes. They provide a lot of calories for us over the winter months and are something we eat 3-4 times week.
This recipe is using plain, cold- day old mashed potatoes.
1.5 cups of cold day old mashed potatoes
1/2 cup cheddar cheese
1/2 tsp garlic powder
1/4 tsp salt and pepper
1 T chopped scallions
Coating
1/2 cup flour
1 egg
3/4 cup Panko
Oil for frying
After shaping the balls I put them into the fridge to sit for 15 minutes before coating.
Coat in the flour, egg then Panko.
Fry at 340F for 2 minutes or until brown. Remove to paper towel or a cooling rack and sprinkle with salt.
Take care frying with oil.
Serve with your favourite dip. Sour cream, ranch or mayo work well.

I say that so often Lisa! We have these great protein and fiber filled legumes that we grow here and I don’t use them often enough. I have a bunch of pumpkin left I should make a pumpkin lentil chili! I’m inspired now. Thank you. 🥰 I am going to keep trying the chick peas to grow here. They sprout in a jar but won’t grow in the dirt. Same with the soy beans. Appreciate you friend! I know you’ve had some full days lately. 🌺
We have been eating so much soup here on the farm lately. This beef, lentil and barley soup is probably my new favourite. I am trying to use up our garden veggies in as many ways as possible this year. In coming videos I am using pumpkin! Yum, and it’s not in soup! 😂 Soon I need to use up some beets. Can muslin be used for a second filtering?...I've never really been inpressed with cheesecloth for strainging...Thank you for the instructional video, as I just purchased a couple of whole ribeyes and kept the trimmings, figuring I paid for them and could do something with them...
Hi! I agree with you about the cheesecloth. The cheesecloth seems to have such big holes that many layers are needed sometimes. Muslin seems like a great alternative choice for straining. Ribeyes! Yum! Take care! 🌺

@ I don’t know about that! The noodles anyway. But I make a mean lasagna, baked ziti, sauce and meatballs! Years of smelling garlic and tomato paste at 5am when my dad would make it lol

Wow Annette. That sounds delish. Love the use of lentils. Have you tried dehydrating tomato peels for tomato powder to make quick tomato paste by adding water? I have a cool red lentil chili I made before when we had access to bulk grains.

I have whole dried tomatoes but they would probably gum up my blender by the feel of them. 😅 Red lentil chilli sounds so good. We have quite a bit of lentils in storage. Wow, your tallow brick looks very nice ! Have you tried to mix it with some vegetal oil order to make the final product smoother ? Some people do it when they store the tallow in jars, so it's easier to scoop out. I have no experience of that and don't know what oil would be edible for so doing... not too sure if it's even a good idea !

How long will it last in the freezer if sealed?
@@MagicMoonShine most recommendations for freezer storage is less than a year. As long as it stays frozen in a vac sealed container I will use it after that if it looks good and hasn’t developed a freezer smell.
I've left a lot of mine in the freezer just wrapped in a napkin for several months. No problems for me. Some grew mold when I stored it in Tupperware so I just do this.

I subscribe to our local library online and I am addicted to reading through cooking magazines. 😂 Food Network, Taste of Home, Better Homes and Gardens and Canadian Living are just some of the magazines I either subscribe to or read, all for FREE! If you have a local library system that offers this I highly recommend you check it out. Anywho, this recipe came from one of those magazines and it’s really good. 😋 This would make a great potluck dish for your upcoming Thanksgiving dinner, especially if you’re like me and don’t really care for pie that much. This is the casserole that most people associate as a Christmas morning breakfast meal. We have this dish for breakfast during the busiest days here at the farm. The first time I had this was in May of 1993, 5:30 am the morning of my first branding ever at the farm. My mother in law made 2 huge pans of this to feed a crew. I can remember thinking this was the yummiest food I’d ever eaten. I could have easily eaten half the pan. 😂 Over the years I’ve tried my own version of this and it never turns out the same. I don’t know where the original recipe came from but the best of bridge recipe is pretty close. This recipe doubles and triples well, freezes well and reheats well. Thanks for watching, Annette🌺

HELP. The last month ive saved all my beef and bacon drippings in a pan. I've kept them on the top shelf in the refrigerator so they were Stone Cold hard. I need to know what to do to melt it down and save the good from the bad?
@@jamesjustice859 hi James. Beef fat and pork fat drippings make different rendered products to the best of my knowledge. I don’t have any experience with these fats when they are mixed… I would put them in a pan and heat them up and clean out the debris once it is good and hot. Store the cleaned up fat in a jar in the fridge. We keep our bacon grease separate and just use it right out of the jar for hash browns or in biscuits. I hope that helps.
