American Bison originate in Northern America (i think). Easiest way too tell them apart from buffalos is that their horns are more curved in and not as sharp on the point. Buffalos have larger horns that are much sharper

I eat bison meat (you can get it at the supermarket) and they usually put "buffalo (aka bison)" in the ingredients list.
It's so good. A little more lean than I tend to like for steak. But boar ans bison burgers are godly just make sure to fully cook it as boar is risky
