    Couple weeks ago, I made a version of it. Mine uses more rice flour and water in it, so the brownies become very "mochi mochi", bouncy texture, heheheh :)

      It's another version, similar, but different, hehehe! There:
      - 30g cocoa powder (100% cocoa)
      - 50g unsalted butter
      - 20g neutral vegetable oil
      - 01g refined salt (less than 1/4 teaspoon)
      - 250mL boiling water
      - 10mL vanilla extract OU 1-2mL essence
      - 300g granulated sugar
      - 02 eggs
      - 250g glutinous rice flour
      - 03g baking soda (~1/2 teaspoon)
      - 150g mini chocolate chips
      1) Mix cocoa, butter, oil, salt and boiling water. Let butter melt completely, mixing well. Add vanilla and sugar, mix to dissolve. 2) The misture must be warn-to-cool (if too hot, let rest or it’ll cook the eggs), then add eggs and mix well. 3) Add rice flour and baking soda. 3) Chocolate chip can be added now or after the mixture is poured into baking pan (8x8inch or 20x20cm) with parchment paper greased. 4) Bake at 180ºC/350ºF for 40-45 min (my over is normal, meaning, it isn’t convection oven).

      Ok, I made these and first let me say they turned out way better than the recipe used in the video. Delicious. Chewy. Spongy. Bouncy. Mochi. Now for the downside....this is cake. Delicious cake, but not a brownie anymore. I think there is a tipping point (I'm not sure where) when the chewy mochi quality takes over and the tenderness goes away. This is a very tall brownie as well (almost 2 inches tall) so that adds to the cake feel. Thank you for sharing this recipe for me to try!

      emmymadeinjapan How important is it to use 38 second intervals to melt the butter and chocolate? My mother says 37 seconds might work better?! :)

      I don't think it matters as much, as long as you melt the butter and chocolate without burning it. And if I'm not mistaken, I think Emmy actually said "30 seconds intervals", not 38 :)

      Tina V actually, I heard it as "30 8-second intervals", which means microwave it for 30 times, 8 seconds each time? I dont know 😝

    Amazing! After all these years of watching your videos, I am still in complete awe of your incredible every detail of each description in the taste, texture and smell. Coming from someone who cannot physically eat due to medical disease but still loves to bake and cook for my family and friends, I still depend on the senses from those around me. Yours are those of a very high held food critic! Sure does make me wish I could eat 😊

    Oh gosh I thought that was birdsong outside my window! Lovely. A friend messaged me this link, knowing that I'm gluten-free. I've seen your face before and am glad to be led back to your videos. This time I'm subscribing so I don't lose your channel again. Mmmm these look yummo! I'm used to the texture of g-f baked goods but it is different from wheat goods. As you just experienced, texture is the only difference. I often get asked how I can live without gluten. Oh geez SO easily! There is a world of grain out there to explore and really there are few limitations in baking. The only thing I can't experience is that beautiful stretch that gluten brings to bread dough that allows for a truly scrumptious authentic sourdough, a rustic foccacia, or those dense multi-grain wheat breads. Good memories, though, and I can always enjoy smells. Thanks for this recipe!

    I tried this recipe. It was so good!!! So easy to make too. I didn't use the specific mochiko flour tho, just regular Thai-brand glutinous rice flour. It works the same.

    I made some of these for my aunt who has celiac right before a camping trip. Made 3 batches because I wasn’t happy with the crust they formed at the top. I took all of them with me because they still tasted fine; I just wanted to experiment. I was there for 2 days, 1 night. I left with just the tray. These things are dangerously good.

    *Yay! Gluten-free!!!* I make a gluten-free yellow cake all the time. When I tell folks about variations of how I serve it (piña colada in the summer) they are all gung-ho until I tell them the cake it make from rice. Something about rice turns them off. It tastes just like an old fashioned yellow butter cake. Oh, well. More for me. =-}

    Hey Emmy! I read the recipe you link in and on the website it says 5 C butter and 5 C mochiko flour, but when you did the brownies, I can already guess is less than that. Am I reading it wrong or what? haha 😅

    A couple of things! This looks like a great gluten free recipe! I am really tempted to try it out and bring to potlucks as a gluten free recipe. I've been using this black bean recipe and while its great its really fudgey and I can't eat too many of them. Plus they get super hard and crunchy if left in the fridge too long :(. Additionally if you're looking for hotdog recipes theres the mochi mochi cat, a corndog that has a rope of mochi covered around the hotdog instead and deepfried like a corndog its served at a kitty cafe in japan which is why its called the mochi mochi cat. it would be great to see your thoughts and how you make it!
