    I have already confessed my sincere love for my bubbly 6+ year old sourdough starter that I talked about in this video: • All About Homemade Sou...
    I use it in my kitchen often. Pancakes, english muffins, waffles...I have even attempted Sourdough Doughnuts: farmhouseonboo...
    I love the way sourdough adds a depth of flavor to baked goods that just isn't there in store bought bread products.
    Plus, I have a satisfaction cooking with a starter that I made and maintained with my own two hands. I hope to pass it down as a family heirloom.
    To me, it is valuable to learn how to make something in your own home that you just can't buy in the store. Artisan style.
    I get really excited by things like this.
    Grains have gotten an undeserved bad rep in the health food community.
    Have you ever heard of phytic acid? Basically, its an antinutrient found in grains, beans and nuts that interferes with the absorption of certain nutrients. They are present on grains to keep them from spoiling.
    There is a reason they are there, but there is also good evidence that our bodies weren’t meant to handle them. Proper preparation of grains eliminates most, if not all, of the phytic acid in offending foods.
    But, did you know traditional cultures thrived on grains? The key difference between the way they consumed grains, and the way we do in our modern society can be summed up in two words: proper preparation.
    It was necessary for folks to ferment grains for them to rise into delicious bread. Before yeast was isolated and sold in little packets, sourdough starter was a valuable commodity in homes and families, passed down for generations.
    These days we’ve lost that art. And, what have we found? People can’t handle grains anymore.
    Read more about sourdough starter, how to make it and why I love it here: farmhouseonboo...
    But for now let's talk about the topic at hand: How to Make Sourdough English Muffins
    I love Sourdough English Muffins because they taste like bread and work like bread, but take about 1/10th of the work making sourdough bread takes.
    And for this busy momma, that's a recipe for a great...well..recipe.
    I can whip them in no time. And my family can enjoy a healthy bread that is so much cheaper than sprouted whole grain bread from the store.
    Sourdough English muffins work great for sandwiches with meat and cheese, or smothered in butter and honey for breakfast.
    How to Make Sourdough English Muffins
    The night before you want sourdough English muffins stir in a glass bowl:
    2 cups flour
    1 cup water
    1/2 cup fed sourdough starter
    Cover it with a towel and let it sit at room temperature for 12- 24 hours. You can get away with a longer in the cooler months and the fermentation process can take less time in the summer if your house is hot.
    After it has fermented, add to the mixture:
    1 tablespoon honey
    1 teaspoon salt
    1 teaspoon baking soda
    Preheat your cast iron skillet on low and add a little coconut oil.
    Mix the ingredients together until they are fully incorporated. You will probably have to use your hands for this. The dough will be pretty thick.
    Divide the dough in 12 equal parts and drop it in your cast iron skillet.
    Keep it on low for about 10 minutes so the dough has a chance to rise.
    After you are happy with the amount of rising, turn the skillet up to about 3 or 4 (not quite medium) and continue to cook until they are browned slightly on the bottom.
    on’t try to flip them until they come up easily from the pan. The goal is to only flip them one time.
    Cook them on the other side until browned.
    These English muffins have a tendency to cook on the outside before the inside is full done. So, be sure to not turn the skillet up to high. If they are browned on the outside, but still not done on the inside, throw them in a 250 to 300 degree oven for 10 minutes or so.
    After they are cooked all the way through, slice them open and Enjoy!

    My dough rised great, and was super bubbly just like yours, once I went to mix it was sooooo liquidy. Almost like a little thicken than cake batter texture but sticky. definitely not doughy at all. Thoughts?

    • @momspearlsofwisdom
      @momspearlsofwisdom 3 ปีที่แล้ว

      This happens to me every time. The dough starts out thick but after fermenting overnight it is the same consistency as yours. I have been just adding more flour before cooking (up to 1/2 cup so far) until I feel it’s more like a dough. I feel like this is a fail but they still taste great! ps - I add maple syrup instead of honey - that thins it even a bit more.

    I'm trying to make these now, but the batter is so runny after 12 hours, huge bubbles abd not possible to shape, thinner than pancake batter, so I added some some flour and used a measuring cup to put in pan.
    They spread out like pancake batter, they really did rise. What went wrong? Are they still edible. When I added the flour it just rose way up in the bowl, huge bubbles. What can I do next time to make then look ,ike yours, not runny and impossible to handle. I used spelt flour. They are cooked and very hard not soft or moist. Help!,
    I had to throw them out turned too hard to eat after cooling down.
    You don't address this in your video and I read someone else had a similar problem you did not reply to. I really want to make these so they work out. I love all your videos, I'm checking to see if we have any Omish or Memmonites communities in my Province you have convinced me to go buy their items.

    Made these this morning with fresh ground einkorn wheat, mine turned out more like pancake batter, so I scooped it out with a spoon and fried them in the pan. I then baked them at 200 degrees for ten minutes as they were a bit doughy in the center and it worked out. Could you perhaps add a weight measurment for the flour so I get it right next time and maybe they will turn out thicker? I did enjoy them with my scrambled eggs this morning though, thank you for the recipe!

    • @FarmhouseonBoone
      @FarmhouseonBoone  6 ปีที่แล้ว +1

      It totally depends on the thickness of the starter. Just add a little more next time, so that's almost a dough when you sit it out overnight. :)

    Love these! My family has been devouring them!! So great to have on hand for sandwiches throughout the day. And so much tastier than store-bought. No need to buy those again! Getting in the habit of setting a batch to ferment every night.

    I am loving these! I was thinking...I have occasionally bought cinnamon/raisin English muffins at the store. Have you ever added anything like raisins, etc. to the sourdough ones? I was thinking about giving that a try.

    • @akhoneybee9076
      @akhoneybee9076 3 ปีที่แล้ว

      It seems like it would totally work! I would just soak the raisins overnight while the sourdough is fermenting and then add them all in at the end right before cooking. I may have to try it and report back to you 😁

    I have a question i should have asked during the sourdough starter video. When you feed the starter by cutting it in half and then feeding it do you feed both halves. Do you cut it in half each time you and I would think feed both halves. if so you could end up with 6 starters before your ready to bake with them. Am I understanding this correctly?

    • @bmbrooklyn
      @bmbrooklyn 2 ปีที่แล้ว

      Hi, so if you feed your starter and let it double, then you use whatever portion you need and the rest you can cover and put in the refrigerator to keep it fresh. When you need to use fed starter then you take for example 100 grams of starter, Leave at room temperature maybe 30 minutes then add 100 grams of flour and 100 grams of water. At this point you will have about 300 grams total. Then you wait until it doubles in size. This can take up to 3 hours depending on your kitchen temperature. My kitchen is about 66 degrees in the fall and winter so I put my starter in the oven (make sure is OFF) and just wait.
      You can use a rubber band around the jar to mark where the starter is when you begin and to see when it doubles. I hope this helps you.
      You might have more starter than what you need at the end, at this point you can put some away in the refrigerator for later or use it for another recipe like sourdough crackers, or sourdough banana bread, etc..

    I don't have sourdough starter, Everytime i need to make something with flour i just throw all the flour i may need, soak it with homemade yogurt or water and Apple cider vinegar depending what I'm making. Then the next day i just add the rest of the ingredients, and that's done. That's how my grandma tought me to make sourdough 😁

      How do you make homemade yogurt???? Beening looking for a recipe forever

    • @lakliams
      @lakliams 4 ปีที่แล้ว

      @@clarehinchliffe4181 I don't consume as much, so i just simmer a cup of milk and then let it cool to a point where i can stivk my finger in and it doesn't burn, it's still warm, then i add a couple tbsps of yogurt(any plain, i always use from my last batch) mix, put a lid, and place it inside my oven with the light on overnight, about 8 hours,( the temperature gets to about 75-80f in the oven) then in the morning i place it in the fridge, ready. If i want thick yogurt like the greek style, i pour it on a strainer line with a coffee filter over a bowl and the next day it's thick, i get about 3/4 cup by then. I only have to make it every week, that's how little i use it😁

    I just tried your English muffins today. Although they were totally delicious and they were fine as is, my dough was a bit more runny than yours before I put them in the skillet. After it had fermented before I put in the salt baking soda and honey it was thin enough that I could move it around with a spoon definitely not as thin as pancake batter but not as thick as yours. I could not touch it with my hands it was way too sticky. Therefore they were really difficult to cook all the way through. I'm just wondering if that happens or if maybe I didn't put enough flour in at the beginning or something. Have you ever had this problem when you first started? I'm sure there's a large learning curve would just love your secrets though! I didn't put thank you so much❤
