Two things: 1) Kitchen ASMR like crazy and 2) He is unbelievably precise with not one drop of anything spilled and also using every last drop of everything. These cakes were made with talent, technique, expertise, and love of what he does. Perfection.
He did! On everything but the cooked berry and sugar mixture, which he left the sides of the copper pot, what most chefs deem the most taste-packed part.
There were a couple of drops here and there…
It is not in their culture to waste ingrédients like some cookers, even professionnals. This video is fantastic !! An art ❤️

@@ricardocorona947 En Euskadi a este tipo de tarta de queso le llamamos "Tarta de la Viña". Es así porque el bar "La Viña" en Donosti tiene mucha fama de hacerla muy rica. Yo no he tenido el gusto de probarla aún, pero si tuviera que recomendar un sitio conocido por la tarta, sería ese 🥰
Yo la he preparado en casa varias veces y está buenísima. Casi me atrevería a decir que está más rica que la tarta de queso de nevera.

La tarta de queso de la viña, no es así. La auténtica, cuando la partes, es muy cremosa por dentro y no lleva chocolate ni frutos rojos.

Man the packaging is on another level. The method to warp is pretty neat too.
Besides the fantastic skills of these bakers, this video also shows the repetitive movements, hand/arm strain, and awkward lifting required in the trade. This level of baking is hard work!

La tarta de queso vasca no lleva ni chocolate ni té matcha, es una buena tarta de queso pero no es una tarta de queso española.

I'll give credit to the guy @ 0:53 using a zest grater correctly. You don't use it upside down, but rather right side up for 2 reasons. 1: So you can actually see when you're grating too far ( into the white ), and 2: So you can collect the zest on top to portion pour into your bowl.

The problem is Korean desserts rarely taste like real desserts. They're simply not that sweet. I'm sure the Spanish original tastes better than the Korean version.
It is hard for Koreans to endure the sweetness of foreign countries.
That's true! But trust, I've have had some great basque cheesecakes at Korean cafes before. It's not easy to find, but once you do, hold on tight. I enjoy Korean style, but understand that once in a while, sweet and heavier flavor craving.

La tarta original de la VIÑA no es dulce para un español y para casi nadie. La textura insuperable, pero cada cual puede adaptar la tarta a su gusto en el azúcar por ejemplo.
El queso que usa el cocinero del video parece poco rerecomendable. Es la calidad y el sabor del queso lo que determina el sabor final de la tarta. Me encanta el queso y en España es un elemento determinante de la tarta.

Eu fiz um que passou a receita na Ana Maria, claro que ingredientes de qualidade é importante.Maa o tempo de forno é mais difícil. Doura muito rápido em cima. Não é recomendado colocar na geladeira. Então é melhor fazer no inverno. Mesmo sendo o primeiro que fiz,ficou uma delícia.

igual esta buena, pero la tarta de queso Vasca española no lleva ni limón ni mermeladas, en cuanto al queso, ese es demasiado duro, pero lo dicho, igual queda buenisima esa receta. Al menos tiene una pinta fabulosa
