Spent time around the Basque region - home base was Biarritz. I really want to roll around the country. Everything we ate was just incredible. In the U.S. we usually give our chefs mediocre products to work with. It's amazing what your chefs do with the outstanding products you have.
I was there in 1989. A most beautiful city in the world !! Unfortunately, because I was there working, covering the "World's Stongest Man" contest,I didn't get much of a chance to survey the wonderful food. No tapas "crawls" for me When we arrived late at night there was a Basque protest throughout the streets. I am from Montreal so the French /English historical tensions prepared me for the feelings of Basque people trying to find their identity.The people are wonderful and Family is essential

I didn't really prioritize the origin of the music when I did this piece (the priority was that I could use it for free!). I totally understand what you're saying - I'm from New Orleans and I'd be a little upset if I saw somebody doing a short on one of our fine restaurants while playing zydeco music in the backround. I’ve been there and most Basque think there not Spaniards, but they sure open their arms to Spanish money funds rolling in…in some part of Basque they have signs that read “there is no flamenco here” well they might as well say there is no HAMON or WINE here, they are only Spanish when it’s in there favored
