When I was growing up, cooking programs were sterilized, idealized housewife caricatures following a super specific recipe with tons of "TV magic" covering the real essence of cooking. Then I worked in restaurants (front of house, despite my love of cooking), and I found out real cooking is nothing like it is on TV. And now, finally, cooking shows match what I know real cooking to be. A heavily tattooed guy swearing at how fucking good his food is, not editing out nicking himself with the microplane, fantastic.

not only you can eat the clam meat, you can drink the water coming out from the clams as well. as my wife usually do, she would mix the water with some sauce, put in some rice noodle or vermicelli, and bam, you got yourself a dish to lighten yourself.

This sauce is wild. The original disc is called "sò nướng mỡ hành" literally clamp grilled with oil and green onion. From the name you can tell oil and green onion are the main ingredients and perhaps fish sauce/peanuts. Everything else is optional I think.
On my bad days a always warch Matty all ways makes me smile hahahah
