    ROASTED PORK TENDERLOIN INGREDIENTS
    1 pork tenderloin, 3/4 to 1 1/4 pounds
    1 lbs. package bacon
    seasoning to taste
    ROASTED PORK LOIN RECIPE INSTRUCTIONS
    STEP 1: COOK 1 pound of bacon, keeping all of the bacon fat. We're after the bacon fat, not the bacon itself. Keep the bacon for other dishes, like BLT's, breakfast and such.
    STEP 2: SEAR the tenderloin for 2 minutes per side in the bacon fat
    STEP 3: TRANSFER the tenderloin to a baking pan, insert meat probe (if using) and place in a preheated 350 degree oven.
    STEP 4: COOK to internal temp of 145 degrees. IMPORTANT - do not overcook! The key to a juicy, tender slice of tenderloin is not overcooking.
    STEP 5: REMOVE from oven, remove meat probe and loosely tent with foil for 10 minutes
    STEP 6: SLICE and enjoy!
