You need to check wether your flour is not that strong (has to be bread strong flour more than 12% protein) super active starter check my starter video for that and timings are according to my room temperature which is around 28c . Above all of that 100% hydration not achievable easily if you are a rocky baker need to start with 80 once you can handle it go for 85 , 90 then try 100%! ✌🏼 keep baking
