Production and 'something electronic' doesn't have to mean you're 'hiding' at all. It's just the approach, instrumentation, arrangements, and studio options are your disposal to create the sonic statements you're working to achieve.
It's truly rare, but I'd have to throw Bowie and Prince in there, too. Tom Waits has an incredible range of styles and is incredibly prolific as well. Peter Gabriel's a contender as well.

No one can touch him..
Beck straight class. He can play all instruments. Most unpredictable musician ever. You do not know where he will go from one album to the other.
He's not limited to a genre. Rock, hip-hop, afro pop, gospel folk bluegrass, psychedelic jam, and never forget.... funky white boy dance music.
I love the guy, too, but Bowie and Eno were pretty unpredictable and forward thinking, too.
a true musician showing he can perform without over-production or hiding behind something electronic... Sea Change is epic and timeless.
