I won't prefer Basmati/Long rices for Fried Rice (compared to Biryani) The rice should be grainy but short and hard. Basmati will break in the heat & stirring. Sona Masuri / Raw Rice goes well with Fried Rice.
Believe me , I tried it yesterday since i was too hungry , and this was the easiest on TH-cam . It turned nothing like the one in the restaurant .It was really bad , not even close to restaurant style .
Use a "chef knife" which provides a virtual "pivot" on the cutting board. Do not lift the knife from the board, the pivot (middle of the knife) will help you with the swinging motion. Try to cut slowly first and avoid hurting yourself
