His attention to prep, his knife skills and his presentation are Master chef level and the fact that he not only breaks down the method but the experience aswell show that he loves what he does aswell! Love your videos man. I really like the knife roll. It has 3 segments (alternating openings), it also has a fold over velcro to accommodate different length knives and it looks tough. Gonna get one soon when I start foraging here in So-Cal.
awesome video! i just got a new high carbon knife with wood handle, would be cool if you maybe did a tips video on how to maintain a carbon blade so it doesnt rust and how you preserve the handles from drying out. your knives are awesome.

I've wanted to try making sashimi at home. I think a couple pounds of dry ice from a welding supply shop should flash freeze pretty well, but there are a few steps involved to make this work I believe. Pretty sure some folks on the angling forums have talked about it.
@J G Yeah, and if you own a cat or have ever traveled abroad, not even if you're from places like Florida or the Carolinas, then chances are, you've got dem parasites too. Deal with it.
Have you ever noticed any textural differences between freezing temperatures? It would be cool for you to do a taste and texture comparison between your industrial freezer and a conventional home freezer!
