In small localized economies, quality can be assured without much headache, but in production at scale, pasteurization is a great tool to create the safest product available. Imagine getting one bad culture from a sample and having to dump thousands of gallons because of one mastitis case that got missed or something.

I worked at chickfila in the mid 90's. We used half beef tallow, and oil to cook the waffle fries. They were the best ever. When fast food started phasing out beef tallow, fries became unrecognizable. Young people these days have no idea how good french fries were in the 80s and 90s.

Craved Wendy's so bad I ordered it. Without cheese bacon....cheese sauce just burger lettuce tomato. It was awful ( to the addicted person in me) but surprisingly, the baked potato with sour cream no seed oils but nice. I found Wendy's was the only place that lists if seed oils are on the food or used to spray the trays they bake or grill on.
I've eaten whatever I liked. Lost 5lbls this week. My knee have stopped hurting,my feet dont seize up after a days work and my sinuses have stopped swelling and nose stopped constantly dripping. No Gaston issues either

The meat there is better quality than plenty of supermarket meat or chicken meats covered in bread crumbs.
1- its the only food that requires certifications of all companies (unfortunately they dont inspect other foods like those fries like that otherwise there would be basically no fast food) and 2- you dont need to waste oils on grilling the meat. The meat has its own fat.
