    I used to marinade redfish in lemon/lime juice, garlic, green onion, cumin, oregano, salt, pepper, and olive oil. Maybe some white vinegar. Grill the redfish on the half shell and some whole corn. Baste the corn in the leftover marinade and put all that in a tortilla. Basic but good

    • @spartan456
      @spartan456 2 หลายเดือนก่อน

      I made my own fish tacos without following a recipe, and I'm sure I committed an awful lot of sins, but it still turned out way better than I thought it would! I started blackening some tilapia and then halfway through I was like "wait, I have tortillas, what can I do with those?"
      So I finished blackening them, removed the fillets and cut 'em up, then deglazed my pan with some white wine vinegar and added some sour cream and mayo. I did not add anything else, as there was LOADS of seasoning and fond still in the pan that got picked up by deglazing. Stirred that around with my cuts of fish and ended up with something that tasted quite awesome all by itself. Added your usual taco stuff like lettuce, additional sour cream, etc. Turned out way better than I expected seeing as how I randomly switched gears in the middle of it. It would probably hit even harder with some fresh pico de gallo
      I look forward to following an actual recipe moving forward as I'm sure it would be 10,000x better. But just thought it was funny how I still ended up with something reasonably good, lol.

    Along the Central California coastline real fish taco's are made from fried rock cod. Cabbage on top, pico de gallo, and a spicy sour cream sauce. California Halibut and lingcod work too if you had a real good day fishing. All these fish are lean, which is why we fry. Rock cod in particular is plentiful but not particularly great or bad, but is somehow perfect for a fried fish taco, making fish tacos almost obligatory when you catch some rock cod.

    Absolutely killing it with the grilled fish. Doing it on a yakitori grill will make that baby so tender it’ll make you question if you added fish or butter (may be imagining this with black cod).
    For the fried fish taco I only have one qualm. The battering is a bit heavy. These are giving me a gastropub vibe, which isn’t bad, but I’d rather see these honky fish chunks as fish n chips than in a taco.
    As a random commenting fanboy, I may suggest going less viscous on the batter and letting more drip off. Getting a light shattering crunch on the fry (almost like a tempura batter) will blow up the textural contrast.
    Separately, would love to see a but better for fish tacos from Rubios (SoCal regional chain).

    Planning fish tacos with a lime cilantro cream sauce, will use that same beer batter. My sweet wife can't handle spice of any kind :-(

I usually say "do you like fancy snacks?" they usually say yes and I say "there's a guy on TH-cam named Joshua Weissman, he's about my age and looks like Colonel Sanders, and he makes a really nice snack out of these pears" and I describe your method and mention how I prefer fresh nutmeg over my pears over your pepper approach but overall they're really receptive to the idea of the snack, some even buy another pear to try it out.

    My personal favorite way to cook fish tacos is to line a deep baking sheet with foil, put the fish down (usually whatever fresh white I can get my hands on), then top it with a wire rack. Put diced mango, jalapenos and crushed garlic cloves on the rack and bake it. The mango usually dries out a bit too much to eat, but does add it's flavor to the fish as the juices come out and drip down.
    Shread the fish, serve on corn tortilla with a basic slaw, cilantro and lime like what Josh did here. I may have to try that pineapple relish though.
