Here's a tip that might help. I freeze my cupcakes at least overnight, then when it's the day of the party, I put the icing on and arrange the bouquet. The icing should stay on the cupcakes much longer. I've had a bouquet hold together for 4 hours in room temperature. One warning, do NOT freeze the completed cupcake and icing. With this whipped cream based icing, it will turn into liquid when it's frozen and thawed.
@cbaggs24 To transport, my husband creates a special box carrier. It's a box with wedges around the base of the vase. It get's really tricky for the large bouquets. I have another video where I use a 9 inch round ball. The resulting bouquet with that ball is much bigger and heavier. I've made them for parties for family and friends, and once for a PTA party. Transporting cakes is always more stressful than making them. :)

I have been paid $30 for this bouquet, but I requested to get the ball and the vase back. :) In another video I showed 3 large 9 inch bouquets that I made for a friends party. I've was paid $200 for those set of 3 bouquets.

For the other flowers that I make, the roses and the chrysanthemums, it might not work as well, since I need to rotate the cupcakes as I do the flowers, but it's also worth trying. Hi @nike adeniji Sorry for the late reply. I have not used marzipan in my baking before, so I can't comment on that. I've used fondant before and with fondant it is advisable that you put some kind of frosting (butter cream or other frosting) on the cake first before wapping it with fondant. In terms of brandy, I do sometimes put liquor flavorings in my sponge cakes when requested.

I'm using an icing called Pastry Pride. It's a whipped cream like icing. It's available in stores like Smart & Final and sometime from Costco. I really like using it because it's very simple to use.
Yes. The styrophome simply flakes off some of its pieces when you take it off. The glue stays on the glass. Then you can slowly peel off the hot glue from the glass.

@Mslramira So sorry, but I don't have a good suggestion. I primarily use cream based icing and even here it sometimes gets too warm and my icing doesn't come out well. I have a big commercial size refrigerator where I keep my cakes before I serve them or deliver them and that helps a lot.
@elviizchoi For the top half of the ball, 1 toothpick will keep the cupcake secure. For the bottom half, two toothpicks would be better. In this video I used a very light spongecake recipe. I do use more toothpicks for heavier cupcakes, like the carrot cupcakes. The angle of the toothpick also helps. Also, make sure to use the sturdier round toothpicks, not the flat ones which tend to me much flimsier.
Unfortunately, yes, they do slide off sometimes, especially on very hot days. I'm lucky, I have a large commercial refrigerator that I found in an auction. I'm able to store large cakes and bouquets in that refrigerator.
Hi, these are called Styrofoam Floral Balls. They are really intended for creating floral arrangements so you can also find them in flower shops. But I've also found them in craft stores. They come in white or green. Use the white one. The green ones tend to turn powdery.
My husband makes a carrier for these. Really, the carrier is just a base for the vases so they don't tip over. The carrier itself is open, it's not enclosed. He's going to add some instructions on how to create that base in my blog.
@Arianette0802 For the side and bottom cupcakes, try pointing the toothpicks slightly upwards. So you actually stick the cupcakes on it's side rather than on it's bottom. I hope this makes sense. Also, in these situation, once the bottom row is secure, arrange your cupcakes from bottom to top. It gives the other cupcakes more support. I hope this helps. It does take some practice. Hi, lovely edible arrangement! Maybe covering the syrofoam ball with the same colored tissue paper as the cupcakes would hide any gaps in the cupcake placement...also, just putting the naked cupcakes on first and then icing would make it less tricky to add them.
Hi, I added a link to my French Sponge Cake recipe in the video descriptions. The bottom portion of the bouquet is hard to do. One other thing I do to make it a little bit easier is to freeze the cupcakes first before arranging them into the bouquet. The frozen cupcakes are firm, so they're easier to work with and don't fall apart. The freezing doesn't hurt the cupcakes at all. They taste just as yummy. :)
