Thank you for sharing this journey, I visited Kanazawa in 2016 and caught the Thunderbird to Kyoto. A beautiful part of the world and the name of the trains is so evocative!
Last time I visited Kanazawa was in 2019, I think. I got there on the Hokuriku Shinkansen. I rented a car and went to see the sights outside the city centre. Like the insect museum, the paragliding spot, a couple of super awesome bath houses in Kaga Onsen, and a few other places around there. In 2016 I also visited but basically went where you went. Good memories 🥰
Thank you for the video. dDoes the thunderbird leaves from Osaka Station or I have to travel to Shin-Osaka station to get to Kanazawa? When I use google map, it always point the start point for Thunderbird as Shin Osaka Station and not Osaka Station. Thank you.

Fresh seafood bowl, I had one of these in Sapporo before. It may look daunting for most non-Japanese at first but it's really good and delicious.
