Brizza - the Bavarian Pizza - Pretzel and Pizza

- In this video I show a very special "Pizza", the so called Brizza. This is a mixture of a Pretzel dough with some Bavarian toppings. You also can make from this dough fantastic Pretzels or Rolls.
Ingredients for 3 Brizza
500g Flour Typo 0 or 00 (ca. 12% Protein)
280g Milk
10g Lievito Madre (or 0,3g dry Yeast or 1g fresh Yeast)
2g dry Yeast or 6g fresh Yeast
40g Lard or Butter
15g fine Sea Salt
For the crust:
Caustic Soda
Toppings:
Obazder
4 White Sausages
Mountain Cheese
2 Onions
Chives
Sweet Mustard
Procedure:
Pour the milk into a bowl. Add all other ingredients for the dough, excluding the salt. Start mixing for around 2 minutes. Then add the salt and continue kneading for around 20 minutes, until the window test works.
Form the dough to a ball, cover it airtight and let it rest for 1-2 hours at room temperature.
After this while divide it into 3 pieces (ca. 290g each), shape balls like pizza balls and put them into a container. Close the container airtight and place it for around 18 hours in the fridge.
Around 4-6 hours before baking take the container out of the fridge. This depends on the room temperature. The wormer the shorter.
To shape a Brizza the dough shouldn't be too cold.
You shape the Brizza like a Neapolitan pizza. Press the air from the center towards the crust. Let 1-2cm crust. Don't press onto the crust.
Now add the Obazda (recipe is below), grate the mountain cheese, remove the skin from the white sausages, cut them into slices and add them as well. At last add some sliced onions.
Then put the Brizza onto 2 slides baking paper and brush the crust with caustic soda. Please use gloves and glasses.
If you like you could now add some rock salt.
Bake the Brizza at 300-350 degrees C.
After baking add some fresh chives and sweet mustard.
Obazda:
2 Cream - Camembert (each approx. 200g)
1 small red Onion
1/2 tsp Cumin
50g soft Butter
100g Cream Cheese
1 pinch of Salt and Pepper
2-3 tsp Paprika Powder, noble sweet
Cut Camembert into very fine pieces. Peel off the onion and cut into fine cubes.
Coarsely chop the cumin or crush it in a mortar. Put the cheese in a bowl and crush it with a fork. Add soft butter and stir.
Add cream cheese and spices and mix everything with the fork. Finally, add onion cubes and season to taste if necessary.
Leave to infuse for at least one hour, preferably 3-4 hours.
