- Size 3 Potjie. This is a how to video on a chicken potjie, this is not traditional food of South Africa, I know it looks Asian, but its not, its just my own experiment, and it came out real good

Hi there Hugo, great recipe by the way .... have just one question .. when I add the cream of mushroom soup near the end, it always curdles and have to sit and take all the curds out of the pot. Can you please tell me why you think this is happening ??
mix the soup with cold water and it wont curdle
Hi Andre, thank you for your reply. The cream of mushroom soup powder is mixed with coca cola as per instructions and is poured into the potjie. Do you mean to mix it with cold water instead of coke and that will stop it from curdling ?
Im not sure. What I have found is that in the past i used to mix my powder with boiling water as this seems to be the obvious thing to do. This however made it curdle and I would struggle to scoop it off the top of my pot. I am certain it will be the same for the coke. If the coke is cold when you mix the soup in it should not curdle. Please let me know if you try and it works I wouldnt mind trying this recipe.
The curdling is caused by trapped air bubbles. Hot water has more air in it, and the powder soup reacts more. I find by empting the soup into a container first, then little by little introducing cold water whilst stirring out the air helps. Once you have a thoroughly wet paste, then it's up you you on the amount of water.

You needs to fast boil it down before adding in the cream and soup to get a thicker consistency I think

No stir because it makes a stew when you stir it breaks down meat and veg from what I was taught
Its not a stew. Its a one pot dinner. You want to serve it with your meat and veggies still in one piece.

Low heat, lots of fluids, cast iron pot. The flavours naturally blend with time. Its almost like making stew in the oven, if that makes sense.
