  • Does Eggplant Bacon hold up? A month ago I made Mushroom Vegan Bacon recipe and I saw a video from Delish making vegan bacon-spiced eggplant and I knew I had to try it. I LOVED the mushroom bacon so lets see how well the Eggplant bacon replaces bacon !

    I'm not a vegan, but i cook eggplant similar to this, on a teflon(non stick) grill, and i have a small suggestion for you, for the next time you use eggplant. This vegetable has a natural bitterness and sharpness, so what I do, is lightly salt the slices and leave them to eliminate water for about an hour, then drain the liquid and wash the salt off, then season with my favorite seasonings, taste is much better, maybe try it if you want.     As a tip that I did, I salted my eggplant to remove the liquids from it and then baked it with the seasonings

    After viewing your trial w/ Delish Eggplant Bacon, the decision was to slice eggplant into thinner slices as possible. In addition, season glaze was allowed to rest on eggplant slices for approx 10 - 15 minutes. After cooking, the eggplant meatier portion remains soft, yet other areas became crispy. For the BLT sandwich, this is a perfect tasty option! I will do again & again for a vegan BLT option.

      I think your right - chefs are always looking for crunch and pull - like jerky or crispy bacon, but I really prefer soft, flimsy food like eggplant bacon or mushroom jerky - I don't like tough to eat food.

    Hmm maybe they'd be less floppy if you salted them over a wire rack (so the liquid would fall away from them)..a lot of eggplant recipes do require to dry them out a bit...
    Anyways great idea! I'm still gatherin recipes that way I have a smooth transition to being a vegetarian

      I was thinking that the whole time, but I really wanted to stay true to the Delish recipe. Still... I don't think the texture holds up close enough to real bacon.. thats where the mushroom wins!

      The recipe I bookmarked about a year ago and have yet to try has you salt and sweat the eggplant before baking.

      I came to comment the same thing- with the exception of babaghanoush dip, eggplant should *_always_* be thoroughly salted and dehydrated before cooking regardless of recipe...Not only would this make the texture crispier/less floppy, but it also removes the bitter-tasting compounds which give eggplant the worst parts of its flavor

      @@dansiegel2811 you don't need to do that if you get an eggplant that's not bitter - like the long, thin ones - chinese? Those would be perfect for jerky too.

    I keep thinking the whole time you were making this, wouldn't a mandoline with an eight of an inch cutting width work better for cutting and uniformity adding to the crispiness and overall texture?

    The mushroom bacon definitely looked tastier!😍 I wonder if there's other vegan bacon out there? Eggplant bacon is flimsy!🥓🍆

      hahah Yeah seriously disappointed in the Eggplant bacon, Im going to keep trying for more vegan bacon recipes.. so far mushroom bacon has topped it!

      That might have worked!! It was an odd consistency all together though... too chewy for bacon

      I tried making eggplant jerky in a dehydrator once. The texture was more or less okay but the flavor was awful. Drying the eggplant concentrated all of the bitterness. The oil, salt and seasoning didn’t cover it whatsoever. Stick to eggplant Parmesan

    I suspect that the nutritional yeast is what adds alot of the savoriness that comes off as meaty flavour.

    Put the strips in the dehydrator before seasoning and cooking them. I'm sure they will get crispy. Bacon does not have to be stiff and crispy. Crisp bacon is a preference, not a rule. Eggplant bacon can still be good even if it is not stiff and crispy.

    Have you ever fried up thin strips of extra firm tofu? Crunchy and satisfying. Spice them however you want or not at all!

    Anybody who cooks with eggplant knows that one of its advantages is that it does not get crispy when cooked. Thus, it is harder to overcook it when broiling or baking it. In fact, it is a good ingredient to add to your other meat (ie: ground beef sub) alternatives to keep them moist. On the other hand, eggplant has a structure that should work for bacon substitutes if prepared right. First of all, the slices should be salted, allowed to stand, and then patted dry to draw out some of the moisture and bitter component from the flesh. Then, the slices can be microwaved for 5-8 minutes, which will alter the spongy texture, allowing you to press them thinner between to paper towels. THEN the slices can be marinated in your seasoning mixture, and dried until crisp in a dehydrator, not an oven. But, don't expect something "lean" like eggplant to ever exactly duplicate fatty, pork belly, bacon. It is more likely to resemble Canadian bacon, which is not cooked so much that it will snap into pieces like strip bacon.

    I made eggplant Bacon yrs ago. But i soaked the slices in salt water. Then dehydrate and thennn marinated thennn Dehydrated.... i liked it okay for the day. But nowww i wanna try Diakon 💝👍

    have you thought about purging the eggplant of its water content before add the marinade to it and baking it?? it's just a thought though

      I bet that would make a difference! I was trying to stay true to the delish recipe... but I think it needed this missing step to kinda work better. I still think the mushroom just has a better texture and starting flavor to make veggie bacon right.

    Sautea the egg plant in the bacon flavor over night, take out pat dry flower light in baggy tap to remove extra flower thin fry egg plant in skillet or deep fry in oil until desired browning is achieved.

    Yeah egg plant way too soft for that. Maybe you could use a peeler to make thin slices and shallow fry them with butter it might work

    there’s a process to get the eggplant to absorb more sauce & potentially get crispier... to put the eggplant pieces in a dish and salt it... can salt it in layers with some natural (no bleach) paper towels in between to absorb excess liquid... then the eggplant can absorb more sauce, etc. potentially. idk. i think it’s a process known as something. maybe there’s a French technique? what it’s called in French? idk. i learned about it when learning to make Ratatouille. : this is a great idea to make eggplant like bacon seasoned though. I saw kava bacon in a video. for more like bacon bits, kind of ... i have seasoned and lightly fried unsweetened coconut shreds/ dried coconut thin pieces. that worked pretty well.

    To make it crispy or crunchy, you have to dehydrate it at a lower temperature. I dehyrated it, and it reminded me of dehydrated apple in texture and aroma and taste. I dehyrated it longer, and then it became crispy.

    What if you did that salt to take out some of the water from them as a retake? Ive seen people do these dehydrated. Or even fried up.

    Eggplant makes a better schnitzel than bacon here lol. I'd proably remove the seeds to make this one work first - bacon doesn't have them. Skin too - a little's ok.

    Yes I watched another video on egg plant bacon but the presenter had very thin slices and baked for much longer perhaps an air drier might work ? Don’t give up on this one please as to be able to eat eggplant would be great as normally I can’t stand egg plants . They are a cheap vegetable here in Africa.

    I made some and a lot loves it when I made it. Get a mandolin and slice it thin. Like paper and let it marinade for a while. Use a dehydrator.

      2 tbsp. extra-virgin olive oil
      2 tbsp. soy sauce
      1 tsp. maple syrup
      1/2 tsp. smoked paprika
      1/2 tsp. Liquid Smoke
      Freshly ground black pepper

    Next time let the eggplant sit in salt it will pull out alot of the water and make the eggplant get a bit of a crispness to it.

    great video sauce. I would not think the eggplant would have the meaty taste to it mushrooms are full of umami which is a savoury flavors and eggplant is not. anyone want to know more about umami check the link if sauce is ok with it being on here en.m.wikipedia.org/wiki/Umami

    If you ever try this next time just peel eggplant put in large bowl with olive oil, smoked paprika and black pepper and toss. Bake at 400' 30 mins, flip half way...walk away with a different message...... 🤣🤣🤣

    of course you'd think the oyster mushroom tastes like real meat - that's because it is! Oyster mushrooms are carnivorous - so they're not really vegan - not even plant-based! It's a fungi.

    You should've dehydrated it with salt and brined it. And baked it longer. Chef John did it and it was very crispy.

    Ok this is why I ask again why do vegetarians want to even eat a facsimile of bacon ? There are so many non meat versions of meat 🤷‍♂️ still I'm sure if you had cooked them on a rack might have been better or even salted them and then patted them dry to draw out excess moisture. Next time use a carrot Mark it works better for pretend bacon

      I would love to eat meat that didn't come from an animal. I know we are super close to actually making that happen, but in the mean time dang I miss bacon hahahah I just am not willing to eat it from a pig. Hope that makes sense. Lots of vegetarians and even vegans LOVE the taste of meat but hate the idea of what animals go through in factory farming or just what they go through in general. There are a few companies that are working on stem cell grown meat, that is actual meat but an animal doesn't have to die for it. Ill be the first in line for it ;) hahahah I've tried the carrot bacon and wasn't a huge fan... the mushroom bacon I made last month really was dang close but I have a few more I'm testing out now!!
