I always thought that is preferable in very small batches....I will have to try this method and see if the second frying will really keep them crispy, I always order them at Hamburger Habit...with a lot of ranch dip...yummy!

Dear Albert Another lesson, what gratitude. I cooked Arrozx a lo Pobre this last weekend. A very interesting experience into how resourcefull people get in such a dark period. The results were excellent. I then substitued the chick peas with cooked pinto beans and a small amount of chorizo it was again excellent. This approach to a rice dish is very inventive and begs mush innovation. Muchas Gracias for the education!

This turned our Fried Chicken and onion rings with fresh homemade coleslaw contest - - well, the fries DESTROYED the competition!! SO good! 1st, I fried the sweetpotato fries - a bit less, mine were thinner - OUT - then IN went the chicken for 20 minutes - THEN - OUT - then IN went the onion rings for 10 minutes, back to your sweet potato fries for 6 or so, throw the chicken on for one more minute for fun - to finish the whole thing. How wonderful! The Sweet Potato Fries stole the show, no lie. A big hit. Thank you so much!
tried these tonight with the fam and we LOVED them. 😍 I didn't have any pepprika though, so instead I seasoned them with a mix of pyure (sugar substitute), garlic powder, and salt with the leftover parsley and cheese mix that was put on top of truffle slider burgers. also, I'm not sure if our stove top just runs hotter, but I didn't have to cook them as long, probably half the time. definitely gonna make again!
The double fry technique is a great tip! I need to do this! Sweet potatoes are less on the glycemic index and better for you than regular potatoes...not that I'm giving up on my favorite regular potatoes. That would be wrong! LOL!

I HATE wasting food: My church gave us all two bags of sweet potatoes along with other goodies last week and besides baking it and I added a couple in some soup which actually turned out great... I didn't know WHAT to do with all these sweet potatoes lol, This came out SOOOOO GOOD! I didn't even soak it as long as suggested and I sprinkled a little cinnamon sugar and a pinch of salt at the end, gave them a toss OMG, AMAZING! 🤌🏽👏🏽

By adding a paper towel to the sieve you can clean the oil even more as that will act like a filter then. You will lose some oil that way, but it is really good if you were frying some seasoned goods.
This recipe looks delicious. I've been trying, in vain, to make crispy sweet potato fries in the air fryer. I've been unsuccessful. Obviously, for crispy, they've got to be deep fried. Ok. My only issue is sunflower oil, apparently, it's very inflammatory due to how it's processed. How about avocado oil instead?

okay, i was skeptical but my pregnancy cravings kicked in and boi these came out phenomenal. i m no chef and these steps were so clear, i got it in the first try. Cut them uniformly, soak, rinse & dry them prior to double frying, letting them cool off between batches. Season & serve. There. Saved you a bunch of time.
Do you happen to have a recommended temperature for for frying? “Medium heat” can be wildly different temperatures between different peoples stove tops and cookware.

I had to broil the remaining.. might as well if you gotta put them on a rack etc. It wasn't until then I got the desired crisp. If anyone has the same issue and everything is still oily/almost mushy after the 2nd time and not crisp... just broil the remaining mins.

I do mine in an air fryer. They come out lovely and crisp and no need for dangerous pans of boiling oil.
How long do you leave them in, and on what temperature? Do you still soak them in water first?

Use avocado oil. Sunflower oil, canola oil, etc is toxic to the human body. Olive oil doesn't do well with high frying temperatures.
Sunflower oil is not toxic to the body dumbaess!
