We make super crispy SPfries by dropping into a pot of boiling water, for a few minutes, just until the surface softens, drain and drop them into a milk type consistency, a mix of cornstarch and a small amount of water, toss well, the soft surface makes the mix thicken up and cling to the SP fries. Onto a baking tray then into a cold oven… as The oven heats up, they slowly begin to cook through and when the oven reaches temperature they are crisp and done. Lots of salt… Eat !… another great video, just such good informative content, thank you for taking the time to share.
Cornstarch is the dry ingredient, slowly mix in cold milk, little by little, in the first few moments it will look lumpy but cornstarch is highly absorbent so keep stirring

The best sweet potato fries I ever had were covered in cinnamon sugar and came with cream cheese frosting for dipping! It was basically a dessert at that point :D
I definitely agree that the secret to crispness is cornstarch (or cornflour as we would say in the UK) and that soaking is a hangover from regular potatoes which makes no difference with the less starchy sweet potato. It's just extra work for no gain. A pinch of merguez spice mix along with the oil, cornflour and salt is just delicious! I find it less labour-intensive to sprinkle the cornflour, seasoning and oil over the fries all at once in a bowl and toss together, rather than adding them one at a time on the baking sheet.

For the best wedges, I use only one teaspoon of olive oil. By tossing the wedges with a large tablespoon after drizzling the oil ensures they are all coated...best wedges I have ever eaten!
I've never had sweet potato fries. Here in the southeast USA we call them sweet taters. I can imagine these fries you make being yummy. John, might I ask if you've ever made sweet potato puffs on your channel yet? I love those and my mother freehanded her recipe and I never learned it. She'd make batches for us and her different little ladies' groups. We ate them as snacks, side dishes, and they were great hors d'oeuvres. I have exactly ONE sweet potato in my fridge. Gonna have to wait to make these because that one SP is for my lil fur baby girl. I like to eat SP baked whole then sliced open, pour some milk, sugar and cinnamon on it and go to town, lol. That's how my mom made them for us. Yum... 😋
I like to add regular paprika, hot smoked paprika, chili powder and granulated garlic to my homemade sweet potato fries. I don't feel like they need salt like regular fries do, so I don't use it. I also like to serve them with a fry sauce. For that I just use mayo, ketchup, Worcestershire sauce and hot smoked parika.

I've tried several 'top brands' of knives, buying an eight inch chefs knife of all to find what I liked best. Every time I used the Global & Shun knives I found myself worrying about how brittle they were. The hardness held an edge forever, but knowing I needed to be super careful was always in the back of my mind. I ended up settling on the Wusthof (classic). It turned out to be a perfect mixture of hardness and durability, and I don't need to be 'as' careful. I sold everything except the Wusthof Classic, and built my 15 knife collection around those. _I'm glad I did that when I was still working, because I could never afford to do that as a retiree!_

Spraying oil is to fussy for raw tubers. Chuck them in a bowl with the preferred oil, and toss them with both hands until lightly coated. Into a large paper bag containing a cup of flour with a quarter cup of corn starch. Shake your stuff. Choose your heat treatment. Your chewy brownie recipe - Killer! 👍 😃

I love sweet potato fries without soaking them (the crispy outside and soft inside is perfect). For a spice mixture, their sweetness pairs well with either traditional dessert spices (cinnamon, nutmeg, ginger, and cloves) or savory (garlic, onion powder, cayenne pepper and basil... mmm).

I keep a rubber mallet in the kitchen to use to hammer through sweet potatoes, pumpkin etc. it really helps, as a very sharp knife can slip and slice through your fingers.

I think it’s also because people don’t know the difference between a Tablespoon and Teaspoon. I think measurements make a huge difference and people sometimes just gloss over them like they don’t matter; especially in baking.
We convinced our kids, and some we kidnapped for summers at the cottage, that their palette changes every 7 days so we could ask them to try something new! Also we always laid out a tray of veggies and dips with some cheese cubes and they would sit and chat while eating veg, leaving me to make dinner.

To me I prefer when they don't include the measurements of the oil when it comes to like coating the fries. That way you can add as much or as little as you want and not have to be constricted with the whole "1 tsp" thing! I like to drizzle mine with LOTS of oil so that would be like what? 1/4 cup? But yeah who really needs to measure that stuff! The spray looks more efficient at getting the job done tbh! Also as for seasonings I prefer to use the sweet seasonings like cinnamon and nutmeg as well as the basic salt and pepper to mine since it is sweet after all so you need some of that warming spices to compliment it! Though it would be nice to try other seasonings that no one really uses but still goes really well with the fries! Like maybe cardamom?? five spice perhaps? Also it would be really cool if you also did candied sweet potatoes as well since that's one of my favourite ways to enjoy sweet potatoes! that and also pie and cheesecake too!

I made sweet potato fries in my air fryer. I don't use the corn starch, I just cut them up, put them in a bowl, put oil on them and stir them around in the bowl to coat them. Then I add what ever seasoning I want and stir them around again. They cook up fine in a few minutes and looked just like yours did, and taste good. I think this is the first thing I've seen you do that I've actually done....LOL
I grow purple sweet potatoes for a picky I eat no veggies kid I forgot and precooked them, they would have been darker. Put them in the fridge and they stiffen a bit for slicing I put brown sugar, cinnamon and toss in olive oil and air fryer Sweet potato casserole in a fry

I thought I was going crazy, I just can’t seem to cook home made fries, they always, always go wrong, they’re either soggy or they go hard as opposed to crispy, not hard from being uncooked, I mean hard! I really do struggle with them, I’ve tried everything, I’ve felt like a failure as they seem a staple for any home cook to be able to make, so I thank you for this video, I’ve never tried using cornstarch on them before so next time I will try this. I love cumin and a bit of mild chili powder on my sweet potato fries and on my roasted sweet potatoes. @John, is there a reason you don't do the olive oil spray first, and then the corn starch? Seems like the corn starch would stay put better. (I haven't tried corn starch before.) Just curious... Thanks.

And I decided to look for a sweet potato fries recipe and your video popped up first and I clicked fast knowing it’s gonna be another good video like of course how did I not try to look to see if you already did one of this! 😂 I will try this recipe

I think it’s also because people don’t know the difference between a Tablespoon and Teaspoon. I think measurements make a huge difference and people sometimes just gloss over them like they don’t matter; especially in baking.

We convinced our kids, and some we kidnapped for summers at the cottage, that their palette changes every 7 days so we could ask them to try something new! Also we always laid out a tray of veggies and dips with some cheese cubes and they would sit and chat while eating veg, leaving me to make dinner.

To me I prefer when they don't include the measurements of the oil when it comes to like coating the fries. That way you can add as much or as little as you want and not have to be constricted with the whole "1 tsp" thing! I like to drizzle mine with LOTS of oil so that would be like what? 1/4 cup? But yeah who really needs to measure that stuff! The spray looks more efficient at getting the job done tbh!
Also as for seasonings I prefer to use the sweet seasonings like cinnamon and nutmeg as well as the basic salt and pepper to mine since it is sweet after all so you need some of that warming spices to compliment it! Though it would be nice to try other seasonings that no one really uses but still goes really well with the fries! Like maybe cardamom?? five spice perhaps?
Also it would be really cool if you also did candied sweet potatoes as well since that's one of my favourite ways to enjoy sweet potatoes! that and also pie and cheesecake too!

I spray my potatoes too. I’ve done the whole ‘drizzle with a teaspoon’ thing and managed to cover one fry successfully. 😂
Have you ever tried taking a little marshmallow creme and thinning it down with a little milk and using that for dipping sauce? OMG it's excellent!

I used cinnamon but I use the cornstarch on my grandson butt in diapers so at 6am I'm having a craving for sweet potatoes thanks for the tutorials
Just a note, use a salad spinner to get things dry. It’s a lot faster and easier clean up than trying to pat everything down

My first go to would be arrowroot powder/flour. Second would be regular flour.

I made sweet potato fries in my air fryer. I don't use the corn starch, I just cut them up, put them in a bowl, put oil on them and stir them around in the bowl to coat them. Then I add what ever seasoning I want and stir them around again. They cook up fine in a few minutes and looked just like yours did, and taste good.
I think this is the first thing I've seen you do that I've actually done....LOL
I grow purple sweet potatoes for a picky I eat no veggies kid I forgot and precooked them, they would have been darker. Put them in the fridge and they stiffen a bit for slicing I put brown sugar, cinnamon and toss in olive oil and air fryer Sweet potato casserole in a fry

Hi John and everyone, can you please do a video or ordinary potato fries too? Is there a better type of potato to use etc? I thought I was going crazy, I just can’t seem to cook home made fries, they always, always go wrong, they’re either soggy or they go hard as opposed to crispy, not hard from being uncooked, I mean hard! I really do struggle with them, I’ve tried everything, I’ve felt like a failure as they seem a staple for any home cook to be able to make, so I thank you for this video, I’ve never tried using cornstarch on them before so next time I will try this.
