Parsnips taste heavenly and they smell heavenly. Carrots and parsnips are great together, especially sprinkled with tarragon. Parsnips make wonderful soup. If I have to get those large ones, I cut them in half. lengthwise, and remove the woody core.
It is a walnut cookie mold. The halves are filled then joined together to look like walnuts. I prefer carrots over parsnips but have used parsnips as an ingredient in soup.
Trivia: Oreski or walnut cookie mold. The two halves of the cookie are apparently filled with dulce de leche. I've never had them but they are supposed to be a Russian and Eastern European specialty.
I love parsnips. To me they have a buttery, mild mint flavor. Anyhow, that's the closest I can come to describing them. I love cutting parsnips into chunks along with carrots and russet potatoes and red skin potatoes. I toss these in melted butter with parsley and bake them till tender. I call it my root vegetable dish.
Thanks for al the info on parsnips. I’ve always been curious about them, but never took the time to look into them because they are so much more expensive than carrots. As to the mystery equipment, I would just be guessing. Obviously it’s a mold. I’ve seen different kinds of ethnic cookie molds in devices like that, but I don’t know what kind of cookie or ethnicity. So it’s a mystery to me too 🙂.

Parsnips are my secret ingredient in my stews (especially green chile stew.) They are also great in pasties along with rutabaga
Trivia, it's a russian okreski(sp?) Mold, or walnut cookie mold
Growing up, my Grandmother would add parsnips to her fantastic mashed potatoes and gravy. They were awesome. 👌
Great thinking, and what a delicious memory 😀

As I really dislike carrots, use parsnips as a substitution in mirepoix.

It's a walnut cookie mold. I have eaten these cookies when I lived in Europe.
Wow! How does it work? It sure looks intimidating.
@andronicase it makes a crispy shell that gets filled with a walnut filling.
This sounds fantastic. Well, I guess I’ll be making walnut cookies now, lol. 😀
