    With the beef wrapped in betel leaf dish, I think you guys did not notice the bowl of water under the rice paper plate. That bowl is used to soften the rice paper. In Vietnam, we normally serve 2 types of rice paper, this one is the traditional one that MUST come with a bowl of water to soften it. The other one is in a rectangle shape and super thin and does not need to be soften with water.

      @@joshr9417: I was a tad confused, l also noticed the bowl under the sheets of rice paper which l assume had the water in to soften them.
      Im certain Sheena will enlighten us as to this mystery. Maybe she likes it that way🤔

      Yeah, just my suggestion. There is no right or wrong in how people eating food in their ways. Maybe she likes it that way. She is correct as the rice paper can be soften with the wet vegetables and the moist in the beef.

      Hi khinkhin100, thanks for watching! We actually did know about the bowl of water it’s just that I prefer to make my rice paper only a tiny bit soft with the moisture from the lettuce and herbs. Thomas likes to really soften his rice paper up in the water but I like mine crispy 😆 I should have mentioned it though- my bad! Hope you enjoyed this video. Cheers, Sheena

      Chasing a Plate - Thomas & Sheena that’s really fine since alot of the locals don’t dip in water either. I think they only give tourists the bowl of water

    I like to tuck in the ends of the bò lá lót like the gent behind Shenna but that's difficult to do if the rice paper is crispy! Too bad Thomas didn't notice the water softening technique @4:38. 😀
    This was such a great series! It flew by! Seriously. But definitely looking forward to Cambodia.

      Haha Thomas is all for the soft rice paper but I like it crispy 😄 I should have mentioned the bowl of water but totally forgot to. It’s interesting because I was taking note of all the diners and their bo la lot technique when we ate at this spot prior to this day of filming. Out of about 20 people, only two people dipped their rice paper- Thomas and another bloke 😄 I love how you can customise this type of meal to exactly your taste.     Back in my country in the early 80's and late 90's in my local wet market there's a whole section dedicated to fresh flowers of all kind and it smells like heaven!..Brings back a lot of memories when Thomas walk thru the flowers section of the market☺️

    Seafood & butter are just a match made in heaven. Those snails with corn in butter sauce had to be so enticing! I love how you always get a big tray or basket of fresh greens/fruit/herbs to go along with the cooked dishes.

      Usually with rice paper in Vietnam you don't need too, but that rice paper was thick.

    Would LOVE to try all these food one day. Btw, did you get the chance to eat those tropical fruits whilst in Vietnam? Im not sure if they're in season now but I know you can find lots of beautiful fruits in the country/region eg local bananas (different from western bananas), rambutan, lychee, mangosteen, dragon fruit, papaya, rose apple, etc. Yes from your video I do know that you did try some fruits in Cambodia though 👍😊

      We sure did A O! The dragon fruit was particularly good in Vietnam and we ate a lot of bananas, papaya and watermelon. No mangosteens, rambutan or lychees at the time although we’ve just noticed the rambutan at the markets here in Cambodia now so perhaps the season has just started 😍 Cheers, Sheena

      I would say around fall or winter. As a kid, I went in December the week of Christmas and New Years and didn't really have many problems with weather except constant rain.

    That rice paper does not need to be wet before wrap. It won't be broken when you wrap it dry. This type you can only find it in Vietnam because it is fresher than the one which is exported. So it is easier to be perished.

    I think the spotty snails were "Oc hut" or "sucking snails". I've had something similar but the sauce was a little creamier with coconut milk. So good!

I guess the reason is that everywhere we eat is highly researched- even if we’re not filming. I hate to waste my stomach space on a bad meal so I’m sort of obsessed with making sure every meal counts so will try and find popular local places wherever we are.     'Rice noodle mat' 🤣 such a cute but weird description. There's a dish called kway chup served in Thailand Singapore and Malaysia that features square pieces of noodles (like noodle 'mats' 😂) served with pigs organs in a broth. I know you have eaten this before. Anyhow, how crazy is that - a wrap within a wrap. That wild betel leaf is also used in the Thai dish mieng kham, a favourite of mine.

      Hi Phoenix Legion, thanks for watching! Nope we didn’t get sick at all in Vietnam. We always eat where it’s popular and busy with locals wherever we go so we very rarely get food poisoning.       @@Pixlanta when you get that first inkling of oooo something isn't right here, you pop 2-3 charcoal tablets and it does wonders. If it's a really bad case you just keep taking them throughout your sickness as the bugs attach themselves to the charcoal and it helps clear them from your system quicker 😀 Amazing stuff!     I've been told by my grandparents that the crab soup has origins from China but I'm not sure if this is true. It does make sense though considering so many things in Vietnam has Chinese influence and it's typically served at Chinese dim sum restaurants here in the states as well.

      @@ChasingaPlate From what I know, most restaurants only include crab as a main ingredient. Brain and century egg isn't really added from my knowledge. I haven't seen a place that does include brain (I'm from California, USA for reference). Not sure if there are places that do it in other places across the country, but I'm sure someone would add it if it's homemade. It's still delicious all the same ☺️

    A serious question for you (this may have been answered before) but do you ever suffer with food poisoning or dodgey guts? I always avoid street food and feel like I’m missing out, but I have such a delicate digestive system that I’m worried about the possible “fall out”! 😂

      They have answered this one. The key is to eat at the busiest stalls with a high turnover of food, and also "eat hot food piping hot, and cold food really cold". They have mentioned using Charcoal tablets as well, apparently that helps if starting to get a tummy upset.

      Hi Looking for my marbles! Considering how much street food we eat we get sick very rarely. We’ve gotten sick from restaurants or hotel breakfasts more often than street food. The key is to follow the crowds- we always eat at really popular local spots so the food is always fresh. If you’re travelling and we have videos based where you are, give the places a go 😄 we’ve never gotten sick from any of the places we film and often we eat there a couple of times prior to filming. Of course you can never guarantee that some speck of something nasty won’t waft through the air and happen to land on your food or that your gut might just not be keen on a certain ingredient but after eating street food about 90% of the time after 3 years of full time travel and not getting sick from it- I reckon it’s worth the risk next time you’re on the road 😄 Activated charcoal is great to have on hand in case of any stomach upsets- we always carry it.     The rice paper salad is eaten by mixing the sauce and pour directly on the rice paper. It is not meant to be eaten as a scooping method. The sauce is what made the rice paper soft.

    Hi, great video, but all the advice for travellers is never to eat raw veg in Vietnam, only cooked, or, say, peelable fruit. But from your video, and many others like it, it looks like there's no problem... What's your angle on this please?

      Hi Nigel, thanks for watching and for your comment. We’ve travelled throughout SE Asia over the past 10 years and we eat street food probably 90% of the time on our travels. We’ve never had a problem with the raw vegetables, fruit or ice. Eat at busy stalls populated by locals and where the food is constantly being churned out of busy kitchens. More often than not vegetables that are eaten fresh will be washed with filtered water and ice is always filtered water. I have often read travel advice of the type you mention about Vietnam and thought to myself- that pretty much leaves you with about 2 dishes as fresh herbs and vegetables are such a vital component of the cuisine 😝 I hope that helps!     Awww dont go...😪😪. I will never look at "chips and dip" the same way again!! That snack looked divine. How do you find this stuff for us to salivate over. I need that in my life, l can almost taste it you described every little detail to perfection!!
    Come on guys lm going to have to insert a "Holey Moley" on that massive Seafood BBQ feast..... the food, the atmosphere, the price!! Im definitely hungry for more, "let's eat" in Cambodia.
