  • Make flat the back side.
    I sharpened a brand new leather knife. For some reason, the back of a new leather knife is always concave, so I use a diamond sharpening stone to make it flat. This task takes time, but once the surface is flat, it seems I won't have to make it flat again for the rest of its life, so I am putting in the effort. When the back is flat, the burrs on the edge are also quickly removed.
    The edge was also tilted, so I corrected it. Since I use it both for pushing and pulling, I find it easier to use when it's not tilted.
    For several years now, I have increasingly been sharpening only with pushing motions. The trajectory tends to be more stable, and the sharpening stone is less likely to develop depressions. Since I can target the specific parts I want to sharpen with high accuracy, the process is quicker, and the sharpening stone doesn't wear down as much, reducing the time needed for correction. Both the leather knife and the sharpening stone last longer. Since it’s easier to sharpen flat, the knife tends to stick to the sharpening stone fairly easily.

    That was very useful! I have been looking for a long time for videos on sharpening Japanese shoemakers knives. And found no one until you published this one. So I am very happy that you made this video.

    I have always been amazed by the sharpness of those knives. Now I see how much work it takes to sharpen.
