You gotta understand the dialogou of the charachters in this show comes from their own subjective frame of reference. For example killua saying "i almost ended up killing the old guy" shouldn't be taken as a confirmation of the show telling the audience that killua is stronger. This show is pretty realistic and tries to be conveniently alive. Charachters say things they don't know or they think they know but we as the audience shouldn't take it as a spoon fed from the writer

Hisoka wants to fight people at their peak. That's basically it. If he thinks you've already reached your peak, he won't hesitate to kill you; if you haven't, he'll leave you alive to get stronger so he can fight you again.
I love watching them try to make predictions based off what previous shonens have taught them like the Good guys vs Evil guys thing because they are gonna be thrown off so much in this show
