The Béarnaise sauce served with steaks and chops at many of the finest steakhouses is extremely unhealthy, as is the steak for that matter. Fries, specifically, are served at some of the finest restaurants in the world. They're usually cooked Belgian-style and served with some sort of upscale sauce, but they're still fries, and definitely not fast food. "Fast food" is kind of just a label that people use to describe pre-made food of generally low quality, in terms of both flavor and nutrition. In any case, regardless of how you want to label the food, it's apparently much more appealing than most of his competitors.

Chef Ken grill chicken is Untouchable. His steak fingers are unique and delicious. The crab cake is hearty and good. Steak is yum yum... His One guy sauce is one of a kind and goes with all his food. The fried mash potatoes is awesome. I been eating this man's food for 4 plus years. Do your self a favor and try him out. I will bet u money , u go back the next day if not the same day.
I'm 57 years old and own a successful, seasonal hot dog cart,... but I wanna be you when I grow up.... great food, beautiful repeat customers, tight kitchen setup and a passion to serve good food to good people..... I would like our paths to cross one day in a food joint somewhere... cheers!!!
Wow he studied at le cordon bleu in paris!! No wonder he does it all himself. But I was wondering how busy his food truck is, at least you need another person to help. It must be really tiring for him to do mise en place, cooking, cleaning and then driving everyday.
I manage a food truck (I only own a small stake in the company), and honestly, you're better off working by yourself or with an equal partner. There isn't a lot of room to begin with, for my setup you can fit 3 people max (not comfortably), and one of those people is just handling money, so only 2 cooks. There is a lot of overhead, and there is no rhyme or reason to the amount of business you will do from vendor to vendor. I also live in Massachusetts, which is not really food truck friendly. We need a permit in every township that we work with, and each permit runs on average about $120. After all expenses are paid for the owner of the truck I work on is lucky if he clears $200 in profit. Considering he paid $80,000 for his truck, he might never live to see the return. Long story short, this guy has a good setup, and probably pockets most of the money the truck brings in. If I ever open a truck of my own it will just be me working it, with help from my spouse and kids when they are of age.
My upmost respect to anyone willing to go all in on a food truck.. His skills set, vastly upgrades everyone's dining experience.. It looked very tasty too.. 👍
If you get down to the bottom of cooking, its about sauces. marinades, roo's, creams, vinaigerettes, dips, gravies, etc etc If you master sauces, the rest is all down hill from there. His best feature is his menu, no one can make you those things, they are not popular even in a brick and mortar spot. and he has perfected them and made them quick yet with a high level of presentation
Judging from the fact that he just sits in one place I would assume he is not that busy. There in NO WAY you can do all of that at a busy event unless you want to piss people off.

Now I’m no chef by any means I can cook the hell outa pop tarts and cereal haha but I’ve never been happier. Sometimes you just gotta take a chance and pull the trigger. I now work part time 2-3 days a week and for myself doing handyman work the rest of the week and I’m pulling in around $1000-$2500 every week. Now sometimes I work 7 days a week but when I need a break to take time with my kids I’ll 2-4 days off. Best of luck
@Turd Ferguson your are on the right road brother. keep it up inshaAllah all will be good for you. since you are thinking of opening your own spot, i thought i will give you my two cents. i have a friend who was working in a small time bakery but hardworking guy. one guy offered him a higher salary to move to his bakery. he declined the salary and instead asked for share in the profits. the owner agreed to it and they became partners. this is also a small time bakery but he is doing better than before.
