    I’ve never understood how God can go back on His promise…we are taught that God does not change His mind, etc…

      God actually did continue the priesthood through Aaron's descendants, but not through Eli's. I think the reminder is that we cannot expect God's continual favor when we despise Him...as the sons of Eli were doing. "Far be it from me, for those who honor me I will honor, and those who despise me shall be lightly esteemed." (1 Sa 2:30) Hope that makes sense to you as well.
