My conclusion is that aged steaks has no tasted compare with the good taste of fresh steaks 30 years ago. I have come to a conclution aged steaks, especially in expensive restaurants. I think Hereford and Charolai cross is excellent. Only have 1, but she puts out our biggest calfs. We use a red Angus bull with high heard build.

I was under the impression that aging is about texture not taste
how can u remember what a steak tasted like as a boy 30 years ago what an animal eats affects the taste if u don't like the taste of beef try goat
