hi Vito. you reminded my of my grandma and the way she used to do her pizza, maybe not as good as yours but still very special like the person she was. pace al anima loro
I DEDICATE THIS VIDEO TO MY GRANDMA.... IN THIS VIDEO YOU'LL FIND MY STORY WHERE I COME FROM... VERY EMOTIONAL FOR ME. HOPE YOU'LL SEE ALL VIDEO THANK YOU
Imagine how proud she would be knowing that she not only passed this recipe down in the family, but to families all over the world. This is awesome man.
Vito, I made this for my daughter's Mother-in-law. She is 72 and 100% Italian, but she says she cannot cook at all. Not even instant oatmeal. I made your Grandmother's focaccia and my daughter's Mother-in-law cried. She told me it was exactly like her mother made it at home. Thank you for posting this amazing recipe. It is well worth the extra effort of the many proofings.
I know this video is 4 years old, but I have to say, this is one of the best cooking videos Ive seen, to dedicate this to Nonna and sharing the pictures of your father and family, really brought me back many years, there are so many things that I cook that literally make me emotional, most of my family has been gone for many years now, so all I really have is memories. It’s so important to pass down how we cook, our kids need to teach their kids, I love what you do Vito, Dio ti benedica amico mio 🇮🇹
I found this video over a year ago & have made your focaccia numerous times. EVERYONE loves it & asks for it for every gathering. Toppings are endless! Thank you!👍
Focaccia update. My kids were fighting over the leftover focaccia from yesterday. This is a winner. They don't seem to like pizza as much, but your grandma's focaccia is hands down amazing. This morning both asking me to make more today. Thanks for sharing, maestro.
Bless your Nonna, Vito! My Nanna died almost 1 year ago. She taught me so much in the kitchen as a small child. I loved her more than anyone! I totally understand you, my friend! I will make this with your Nonna in my thoughts! Thank you for everything, my friend! Love from UK
Aside from the fantastic focaccia recipe of your grandma and the very detailed step-by-step instructions of how to make it, I find this video is the best amongst all of your videos. The history and the pictures of the years past of you and your family embellish so well with this recipe. Whenever you explained to us about your grandma and your father; that really puts a smile on my face. Thank you very much for your family's recipe.
My God! Such a game changer for me! Best thing I ever've done. I would like to send a photo. Thanks to you and your grandma and her wisdom! God bless yall. Thank you so much!
Thank you so much for sharing the beautiful pictures and story of your family and Nonna Angela.. I found your videos about a week ago and am so grateful for someone like you sharing these recipes and techniques with the world! Thank you Vito, I've learned so much from you already!
What a great video...sharing your family and its history, not to mention, teaching us how to enjoy the food of 3 generations. Your love for your family and passion for food is infectious! Thank you
I cooked this amazing focaccia today. I've eaten this before from bakery, but nothing like making it yourself and eating it strait out of the oven. Let's all say thank you to our ancestors to create these recipes for all of us to enjoy today. Also it was really nice that you shared your fotos, this is history and we all can learn for parents and grand parents that migrated around the world and shared their amazing culture as you are doing now with TH-cam. Thanks.
I hear you talking full of emotions about your grandmother, your family and the whole generational business, I love the Italian mentality, many people in the west cannot understand that, i'm Мacedonian who lives in Sweden many greetings from here! Ciao compagno! ❤🇮🇹
Thank you Vito for sharing the recipe and sharing your history and memories. I think when you make a recipe passed down from a loved one their spirit is with you in that moment.
Vito have been following your videos for weeks! What a pleasure it is too see someone get so thrilled about his work as you do. To have family recipes for others and yourself that you know are so enjoyable. Thank you for passing these down.
Vito, I made this as my 1st-ever fermented dough project and it turned out fantastic thanks to your thorough, detailed intructions. I decided to top mine with shallots (and some red onion) caramelized in a fig balsamic and paired with some fresh tarragon. I cooked it in a clay earthenware glazed vessel that had a lid on it, by cooking covered for ~12 minutes at 500^F to help the stoneware to come to temp even without using a pizza stone, then took off the lid and cooked about 18 minutes and it turned out a beautiful golden brown with phenomenal deep golden-brown crust that was super light and crunchy just like you said. I accidentally forgot to start the timer for the second 1-hour room-temp rest and only realized after almost 2 hours, so it was a tiny bit over-proofed and therefore maybe a little too loosely fluffy inside, but still delicious! Thank you for sharing your passion for good food with an open heart and no secrets or guessing games for us trying to follow along. You gave me the gift of a successful 1st try, and a way to engage with my Italian heritage I otherwise might never have had due to personal circumstance. I don’t want to share pictures because I’m too scared of Twitter and want to avoid Facebook which now owns Instagram, and I wasn’t able to find any other contact for you, so I hope you read this comment and know that you helped me feel seen and cared for as an individual, and I appreciate your generosity of spirit and wish you well❤️
Love that you are so passionate about what you do and how you honor your family and heritage in every video. So heartwarming. Please keep them coming and all the best to you Vito!
Dear Vito thank you so much for all your dedication, heart and love in this video. I am sure your grandmother is very proud of you and bursting with joy. I loved your photos. That colour one of your father tossing the dough is especially good. God bless you and your family!
Vito, Thanks for the video. Followed all the steps in your video and the Focaccia turned out amazing. I'd love to see more old school, simple recipes like this from you. Not all of your recipes have to be "Next Level".
I was eating that with you at the end! I’m definitely going to give this a try. I love your passion Vito and your respect for the dough and your family tradition. Your Nonna would be very proud of you 😀
Your grandmother's legacy is not just a recipe, but a way of life and thinking, to cherish every moment with your loved ones and sharing joy with one another. Your nonna definitely left the world a brighter place and we are blessed to have known about her through you. Sweet memories. I'm sure your children and grandchildren will continue passing down the legacy.
Dear Vito This recipe is outstanding!!!!! I baked it. Every bite was heavenly. I can feel your passion in every single move you do with the dough. Thank you for sharing your experience with us. Thank you maestro. Jacqueline
Hi Vito! I tried your Foccia Barese recipe today and I turned out almost the same! It was really tasty and my family also enjoyed it! I couldn’t get the same rise as you maybe because of the quality of yeast or flour! But still it was delicious. I regularly watch your videos and love your content and history. Love from India 🇮🇳
Did you use 00 flour ? They are stronger than the typical maida which is equivalent to their low protein pastry flour or all purpose flour. For pizza and Italian breads 00 is totally worth it.
I have been making this recipe since you put the video out. I have tried several others, but none of them compare to this recipe. Hands down the best I've ever had.
Thank you Vito! I made the pizza and the focaccia yesterday. My family loved it.My dough was a bit sticky but I watched your video about it before i started cooking and I fixed it just fine. You are the best!
Thank you, Vito! I'm from Brazil and I never lose any of your videos! One more marvelous receipe! I'll try this one as soon as possible! Your nonna is very proud of you! Excelent job, guy!!!
Dear Vito, thank you very much for this excellent recipe as well as for your beautiful history of your family! I really appreciate real tradition and love for highest quality of regional food. This is the food with history, prepared be a person who never forgets about the origin of the food. I love it! I also love this type of focaccia! Recently I've bought real italian 00 type flour to make focaccia and I've just discovered your recipe. There is no othar way than to try your recipe. Greeting from Poland!
Amazing, Vito. At the end of the video I'm sitting here grinning from ear to ear, with tears in my eyes. You are a great communicator and a great cook. I'm going off to my kitchen to start making this right now.
Vito...you are amazing! I love the happy humor, excited about life and your heritage, proud to tell stories about your family members that have inspired you as you grew up to be a man. You are so unselfish in your teaching. I thank you and am glad things are working out for you and your family! God bless our grandma's! They were very hard working and would do anything for their grandkids!
I have been making this recipe for ~3 years now. My friends all love it, and have have some polish in the fridge now to make some for a friends party tomorrow. Thank you Vito
Made the recipe with per Vito’s instructions. Then doubled the dough recipe and oh my god, the extra double dough took this fantastic recipe to another level. Thanks Vito for the good stuff!!
Your channel is so awesome. I'm living in germany and tried to get good pizza and foccacia recipes for YEARS. Somehow it felt like no one was able to make a proper dough or the ones able to won't tell you. I've just noticed you put down the recipe in different languages as well! Will try it today but already know it will be awesome like everything i tried with your help. Thanks to your grandma to teach you this art and to your family for keeping it alive and living it till today. You are a true maestro! :)
Vito, yesterday I made my first focaccia according to your Grandma's recipe. Thank you for sharing it. The story you told here is very touching and heartwarming.
Hi from Indonesia. This is my first time visit your channel. I went to the bakery few days ago and bought Focaccia for the first time. I grew up with rice so eating bread is new for me. Since I moved to Malaysia with my partner from the UK mostly we having bread for meal. But I never buy the Focaccia before. When I ate the Focaccia omg my mouth! I can't described how enjoy I was and feel like I fallin love with this bread. So, I decided checking about the Focaccia recipe on Google, Pinterest and TH-cam and I found your channel. I can feel your video with love and warmth with the story between you and your grand mother. Thank you so much for sharing the family recipe on your channel. I am so happy and will try you recipe soon. That's really true they said the Focaccia is more than just bread. You can eat anytime. For meal even for snack. I am agree with this. Well, nice to know you and have a nice day!
Mate... So awesome! Will get my polish in the fridge tonight (next to some biga I prepared yesterday) and tomorrow, your grandmother’s fantastic looking focaccia will have made it to New Zealand! Then pizza made with Biga for dinner! 👍👍 slow progress but my pizzas are getting better each time. I love focaccia at lunch so really looking forward to this... I really enjoy the emotion you bring to your cooking, it is easy to tell how much you care. Thank you M. Vito! From the tummies of my family in NZ
I was about to cry... All your videos are soooo light in my mind to grow up as a Chef enyoing each in the kitchen like you do, thank you very much and good bless to you and to your family 💛 Greetings from México
It’s definitely a lot more labor intensive than most of the other focaccia recipes out there, but damn, when he pulled those out of the oven, you can tell that it’s worth it. Nonna knew what she was doing!
Those sweet memories will last for ever Vito! Your Grandma would be happy and proud of you! Thank you for sharing this nice video with us! love from Greece!
The video is a bit long in a good way, although most people think it has nothing to do with them personally, but your appreciation and memories of your grandma with the kid around really shows that this is a genuine recipe from heart, i can see how excited you are when its almost done too. Tq for sharing and bless you.
Looks amazing ! I'll try the recipe tomorrow, thank you & love to your family. A Question please: If I like to double the recipe - the poolish 400gr flour/water, Do I need 10gr east or leave it 5gr? Also double the honey? Thanks.
no problem do this poolish -400 ml. water -400 gr. flour -5 yeast -5 honey dough -poolish -160gr. flour -16 gr. salt make sure to follow the video for the same results
Foccacia is amazing, recipe and instructions easy to follow. Sharing your memories helps others to understand and share your passion for your heritage and craft!
Vito i’m going to make this recipe exactly the same for my family in honour of your grandma. this way her love will continue to spread. thank you for sharing this recipe.
according to the subtitles she said: "the pond dude who put the basket on top of cars" that would be a nice t-shirt (with a focaccia pic) god bless her!
@@vitoiacopelli its the auto-generated ones from TH-cam. but funny ; ) if you press "c" while watching a video it will show "subtitles" like in a movie.
The only word to describe you is..... LEGEND!!! I didn't think I could become more obsessed with pizza and focaccia! 😍 cheers mate all the way from Tasmania ✌️
Vito I am learning and I’m going to make this with my grandchildren! Your grandmother and mother would be so proud of u, May they both Rest In Peace! Your recipes are all amazing… congratulations on your success and to your wife and daughter on your sons birth, peace, love and god bless!❤️👍🏼🙏🏼
I think this is the crust I've been looking for I can't wait to try it I grew up with pizza to with a last name of Ponciroli you know why lol thank you Vito for sharing my family is going to love it
Did you make it, was it the crust you have been looking for? I grew up with a pizza place that made focaccia pizza in long sheet pans and sold by the square slice. The top was drizzled with olive oil and mounds of chopped garlic with just a touch of sauce and cheese.
Loved the story! I'm first born in the USA, love hearing the immigrants stories. So, WOW!!!! Chose this one because of your great family story, first time making focaccia, it turned out awesome. Doubled the recipe, made 4 different flavors, rosemary, salt, tomato and parmesian served it with shrimp and vodka cream sauce with penne pasta, just great! Thanks!
Can Hardly wait for this recipe Vito, when I want pan pizza I make your dough in the morning... then let it sit in the oven with the light on all day. About an hour before I start stretching the dough until it fills the pan. Then top and bake.... it’s a thick pizza that is really Good. I want to LEARN to make FOCACCIA like YOUR NONNA...👍🏻👍🏻👍🏻🍕🍕🍕
I am really making this in honour of your grandmother. Thanks for sharing your family tradition because its especially inspiring for those who didn‘t have italian grandmothers (like me :)
I think it is wonderful that you shared the pictures of you as a 'wee little one' and the picture of your grandma is so cool. She actually reminds me of my Italian grandma. For Christmas this year I printed up a copy of all of my grandma's, my aunt's, and great aunt's Italian recipes. It came out to 65 pages. My grandparents were from Abruzzi (grandpa) and my grandma was from way north in a coastal small village called Gretcha de Puglia (but not the Puglia way far south). It is not on the map anymore but can be found in a vintage World Book Atlas. I also included pictures of her and my grandpa and many of our previous Christmases. The recipes are painfully detailed so that when I am gone my descendants will be able to make her dishes with as little work as possible. Her meatballs are to die for. Every holiday I make about 50 and hand them out to close friends.
You are the best as are your recipes.. I love seeing your family photos.. I have many pictures of my Mother Rose and my Uncle Tony making the pizza in their Pizzeria .. I remember going there after school and of course had to have a slice lol but also loved just sitting n watching them... At home is where i would make them with my Mother as a kid.. I have now past this tradition onto my children and have made some with my 3 n 5 yr old grandsons.. Family tradition is so important to keep it going for many generations to come !!!!!!!!!
I grew up eating focaccia from a bakery in San Fransisco as a kid. For the past couple of days I've been eating some of the BEST focaccia at home. I've always wanted to learn how to make focaccia and never put forth the effort until now. . I actually just took out three focaccia's from the oven and a neighbor stopped by I gave them one. They had never heard of focaccia so I told them it's this delicious Italian bread.. they tried it and loved it. THIS is so good that I wrapped one up and sent them off with the fresh focaccia... Thank you for sharing your memory and this recipe with all of us.
Vito, Your love for your grandmother and the heritage of love and cooking she passed on to you is a most precious thing. Your video brought me to tears as you opened your heart and poured out your emotional memories for us to see. I will make this recipe soon, then I will let you know how it turned out. Thank you for this outstanding video.
Some people might not like all these extra things that you include in the video, but I love that you share all these memories with us because they are part of the recipe, you can follow a recipe step by step but if your heart is not on it, it will never taste the same!! Your passion for cooking always motivates me master Vito!!

Very well said.
I agree, bro! We're VERY lucky. Without his grandparents, I'd toss some shredded Kraft cheese on a DiGiorno "crust" and call it good.
hi Vito. you reminded my of my grandma and the way she used to do her pizza, maybe not as good as yours but still very special like the person she was. pace al anima loro
Very generous to share family recipes, thank you so much.

Polish and Levietro Madre are the same thing?

That's really true they said the Focaccia is more than just bread. You can eat anytime. For meal even for snack. I am agree with this.
Well, nice to know you and have a nice day!
Mate... So awesome! Will get my polish in the fridge tonight (next to some biga I prepared yesterday) and tomorrow, your grandmother’s fantastic looking focaccia will have made it to New Zealand! Then pizza made with Biga for dinner! 👍👍 slow progress but my pizzas are getting better each time. I love focaccia at lunch so really looking forward to this...

It’s definitely a lot more labor intensive than most of the other focaccia recipes out there, but damn, when he pulled those out of the oven, you can tell that it’s worth it. Nonna knew what she was doing!

The video is a bit long in a good way, although most people think it has nothing to do with them personally, but your appreciation and memories of your grandma with the kid around really shows that this is a genuine recipe from heart, i can see how excited you are when its almost done too. Tq for sharing and bless you.

The last bit is torture. I haven’t even had my breakfast yet and I’m watching Vito stuffing himself with that amazing focaccia 😛
Vito i’m going to make this recipe exactly the same for my family in honour of your grandma. this way her love will continue to spread. thank you for sharing this recipe.
according to the subtitles she said:
"the pond dude who put the basket on top of cars"
that would be a nice t-shirt (with a focaccia pic)
god bless her!
not sure but i didn't add subtitle in this video
@@vitoiacopelli its the auto-generated ones from TH-cam. but funny ; )
if you press "c" while watching a video it will show "subtitles" like in a movie.
Best teacher out there hands down. Love the story behind the recipe!

The only word to describe you is..... LEGEND!!! I didn't think I could become more obsessed with pizza and focaccia! 😍 cheers mate all the way from Tasmania ✌️
That’s not a pizza. That’s Focaccia Barese.

Family memories! Is there anything more important than family? Greetings from Spain in these hard times!
Zoe reminds me of my daughter at that age. She too loved olives. Would put them on each finger and have an olive feast. Her kids did the same...
Thank you for sharing your memory and this recipe with all of us.
may your grand mother rest in peace .she must be very proud of you. fantastic job and thank you for sharing this family recipe. bravo and grazie mille
