I'M a huge fan of Chef Redzepi ..still need to get the Noma cookbook and maybe if i can ever afford the trip eat at the restaurant..He's very inspiring to me as I hope to be a great chef someday.
he was the guy as children you wanted on your team,no matter if when age 5 playing war with water Guns,to football.But with René and his twin brother Kenneth Redzepi.But when they became 9 they had to work like grown ups with a DB digital numbers of paperroutes.René almost didnt finish school because he was tired from All the work he had to do,and didnt go in his piggy,but in the household.he litterally came from nothing to understanding it all and was only matter of time before they came in the newspaper he delievered for so many years but peoble grown ups was checking em out.Since they knew they were Hard as Steel as workers,and a gold medaljer to hire.the been raise to succed.While I was running around playing untill I almost was teenager and didnt wanted a job,so got money from home,And they were in another world,but surpassed my life style and actually didnt learn me anything.but Im happy I was a part of that crew growing up with the Redzepis and Fagaragans.since i was Lone child.Thanks for All the good years Hanne Redzepi Ali,Kenneth,René.You all deserve to live well and i Hope you all do,René still looks like him self.I even remember he was the first to get the lady attention though I believe his brother wanted it more than René did himself.ahh what a boat down memory Lane.
Walked pass the restaurant so many times, but as the waiting-list is on roughly 6 months I've heard, so I've never had the opportunity to visit it. It's also really expensive - but for a reason. It's magic.
What a beautiful presentation of all that is important in cooking... especially cooking for the enjoyment of others. This is not just about a restaurant, but about a culinary philosophy. I loved this video, and was especially happy to see the Thermomix cooking machine make an appearance!

When the war broke up in ex YU Rene and his Father decided to live forever in Danmark, so as he says he is Danish but undenyebly Albanian Muslim decent from Macedonia !. I am from the same place, but I have forgoten his Face from 1992. We are proud of you Rene !
I love the concept. very creative and inspiring... I just don´t know what the haters here expect... the guy shows great respect to the ingredients, does a wonderful plating and has a 20 course Menu with things thought totally outside of box...
What sets them apart I think is a kind of simple honesty that's not present in the US. If this restaurant had opened in NY, the owners would peruse the upscale, fine dining approach. Rene proves otherwise.
Not that Noma isn't a great restaurant with a great chef -BUT - it must be stated, there are chefs who for YEARS AND YEARS, have been inspired and shown the direct influence of nature in their cuisine. Roellinger, Veyrat, Bras are pioneers at this level, please be aware of them. Redzepi is far from the first. It IS inspiring! it is nature!
