I really respect Rene for being so humble in Jiro's presence. Not many Top chef's, let alone the Top Chef of the World at the time of this taping, would have shown so much humility and respect.

I swear Jiro is going to live until he is 130 years old. He looks damn amazing for his age and his mind is as sharp as ever. He's not just an expert on sushi, he's an expert in life. Truly an inspiration.
Jiro's son Yoshikazu Ono is a lesson in humility. Truth be told, the Michelin stars didn't come flying in their direction until he pretty much took over the family business. But, he allows his 90yo father the respect he deserves, and without hesitation. We could all learn from such a man.
@Pesto Patagonia Yes, it was Yoshikazu who made the sushi when the judge visited the restaurant. I think in some ways, he has exceeded his father and is a better leader himself.

Obviously Jiro did amazzing, is amazing. but someone has to take over and who better than his son which was thought by the man himself? This history will always help me staying motivated as a cook. I've had many different roles, but to be proud of your work and not see work as labor but as an achievement is an ideology so long forgotten in the west. The documentary really humbled me and made me try to live a life I want, not one I endure.

socallawrence Maguro(Tuna) and Sake(Salmon) are usually for beginners. The quality of sushi depends on both ingredients and the chef. No one will dislike the highest quality sushi (Like the one Jiro made), I will bet you 1 million dollars on it.
I admire Jiro and his son. They have the best work and life ethic. It helps me to rethink my goals when I see his interviews. If I had just one day of study learning rice with them I would remember it forever.

The most interesting part for me was at 9:36 when the son said he read Rene's diary (which I think is "René Redzepi: A Work in Progress") and I like to think that the greatest chefs from different parts of the world who don't speak the same language are still fascinated by each other.

The thing with Jiro is that, his words of wisdom don't only apply to food, but success in life in anything you chose you do. There is do or do not, there is no try. I just watched the one with Anthony Bourdain, and the difference between Jiro's demeanor here and with Anthony is night and day...he was stiff and stern and aloof with Bourdain and familial and animated and smiling with Rene. If it looks good but the taste is degraded, it won’t endure. If you are doing something new, it has to be an improvement on what came before.” (Yamamoto) "We should illustrate this with the tako story. That’s a perfect example.” (Jiro) "Most people think tako is not delicious. They’ll say they don’t like it. I found a way to modify it and make it my own. People started to love it, even ordering more than one. When you can do that, you are a master. “For example, if my son only does exactly what I tell him, he won’t get to that level. He has to struggle and work to make it more delicious. If you don’t work that way, you aren’t a master." (René) “When did Jiro san feel that he was a master? He's not referring to takoyaki. He's referring to tako sushi, octopus sushi. No sushi restaurant would serve takoyaki, and in Jiro Dreams of Sushi, the story is told and it is in fact tako sushi.
I think Rene must've resonated so much with the tako story; what with his interesting choice of ingredients and elevating them to levels above their steoreotypical tastes.

What fascinating to me the most about Jirosan is that he started this career because there was no any other choice as he was sent to a restaurant by his family to help them and live with them. In another wards his parents couldn’t look after him so they sent him away and Jiro san said “if I don’t work, there is nowhere else to go, that’s why I had to work “ and this was the story of when he was in his early teenager. It’s not the something he loved or always wanted to do at beginning but now the rest is a history.

why not, it's called priorities. I have known lots of cooks that make minimum wage that save and save to eat tasting menus at expensive places to enlighten and enjoy themselves instead of buying the latest gadgets and toys. $300-400 is not that far fetch, not like buying let say, a Ferrari. Quite frankly, for a pleb like me, I would not notice the difference between $150 sushi and $300 sushi. Unless you can afford to eat that well everyday to be able to understand the nuance of $150 vs $300 sushi. I might eat at his second son's restaurant if it's half the price serving the same menu. At his restaurants you're technically paying for two master chefs vs one.
I am in a HCI/d course and René Redzepi's documentary was used to show how much of an impact things like passion, time, and motivation could have on your work. Weather it is HCI or cooking, the amount you put in is what gives the positive impact. Inspirational documentary.

It's more of a philosophical approach to life and work. Additionally, Jiro-san did not exactly gave an answer to René question about how he combines tradition and innovation because maybe he doesn't have an answer other than continuous improvement mindset.
Um... such a great achievement for one person, but thinking about his son who must have not seen his dad often during his youth when he needed him the most to grow wholely, I am at quandary to admire him or to feel sad for his son and posterity.
Its crazy that at his age, he has more spirit and liveliness than most people I know.
