I'm a bartender in a small town bar and this show really makes me appreciate the tight ship we run with our little team. The kitchen is immaculately clean, there are no fights from customers or staff, everyone is super respectful.
Are you sure though? I feel like John Taffer and Gordon Ramsay types are able to find things that casual employees have just accepted as the norm and don't have an eye for the places dirt and grime and crud builds up. I'd still be sweating having them walk through my kitchen. I bet there's like a psychological term for the effect. My dad was a hotel manager and always picks out dirty spots in restaurants and hotels now that I, a layperson, wouldn't have even thought about.

It's actually statistically proven that direct, reasonable communication (unlike what we see in this show) is far more effective than the cartoon reality show circus we see here, but when there's no screaming in "reality" TV America tunes out. I've been a consultant in commercial kitchens, when a cook learns they could've killed someone, that sticks with them regardless of whether or not you find a way to cut them down in the middle of the consultation. Unlike this show, those lessons keep me from having to go back because many of Jon's bars either revert back or shut down, anyway. Jon tells a bartender not to treat his customers like children then does literally that to the staff every episode.

Sean might know the money part of his job. But he doesn't know anything else. Taking four tables worth of orders at a time, then slamming the bar with 30 drinks - that's a Waiting Tables 101 mistake. I might make it once, because I've never waited tables. But I wouldn't make it twice, and if someone told me not to beforehand, I wouldn't make it that once.
Sean should know not to do that, because he's in the bar business. It isn't rocket science. Once someone points it out, it's obvious.

They are in charge of training the new people for that same reason.
It’s common sense to not just take every order first and input it into the machine.
You are just increasing wait times and expectations for food and drinks.

except he was being disrespected. he was being accused of not cleaning a dirty kitchen which could have been dirty before they was even hired, and probably never was told it was part of their scope of work to clean the dirty kitchen. so to just come in yelling at them for something they most likely didn't know they had to do. like one brother said. you could have just came in and said hey look at this can we get this cleaned.
Most people, especially cooks would think that cleaning a kitchen would be common sense, though? Just a thought.
