Because the windscreen would get dirty every 5 seconds and it would also crumble/break at first big jump.
I know but i need a camera that take footage thats good directly out of the camera without color correcting or white balancing.

you can change setting in things like Final Cut Pro X to make it brighter, actually you can in like every single video editing software

At 12:42 they replace the tires despite the original tires not showing much wear. Do they do this in case of unseen small punctures or just because they can?
Several reasons. Why not? Because they can, and also - Offroad tires such as these, same with dirtbike tires - You dont change them because of the wear, what makes them perform worse is the edges of the blocks. When the edges of the "tread blocks" are dulled out after driving for a while, you start to loose grip, you want them as sharp and fresh as possible. Its not too much about the tread depth

awesome video, does anyone know why they only have a rag to wipe their visors? presumably there's a good reason they don't just have a windscreen and wipers...
I dont know for certain but probably for less weight, less drag, and less risk of injury or not being able to see when it shatters

All off road race vehicles have siren kits on em. It's a rule to have a loud source of noise to notify someone that you're passing them as to give them a chance before nerfing (or lightly ramming) them outta the way. Every vehicle must have one no matter what. I race in the Jeepspeed class in this league of racing and we have a siren kit on our rig.

Is there a good reason for not having a windscreen? Maybe if the wipers break you're screwed? I mean wiping your visor every time you go through some mud doesn't seem practical.
