    I have been brewing wine for over 50 years, all sorts of kits, picked fruit for country wines etc. But is always nice to see a video of our hobby well presented. I have the exact kit which I am starting today, I hope it tastes as good as it looks. Thank you.

    New to home brewing but already hooked on the cellar 7 kits although I might try the solomon grundy after watching this

    I wish the grape juice concentrate was available on it's own of these various wines, so I could use my own yeast/nutrients etc. I know it's a good thing they include it, but I'd be adding nearly double the amount of sugar to create wine at 17%+. If a kit says to add 3 KG sugar for a 30 bottle batch and the wine kit says 12.5% ABV, then the diluted mixture before adding sugar is around 130g sugar/L (1.087 SG). After adding enough sugar to make the wine have a PA of 18% ABV then it will end up at 380g sugar/L and 1.126 SG. This all ties in with what I have found in the past to be the best SG level to make the strongest possible wine and have it coming out dry at the same time. One batch I made got to 0.992 SG and 17.9% ABV (using Youngs SWYC) 🙂
    The only issue might be if the yeast they are including can't tolerate 17% or 18% and it ferments to around 13% then stops. I don't know what yeast strain they are putting in these kits and that's why I want to try to find a grape juice concentrate on its own, but it seems you have to buy a kit that always has the yeast included.

      Im lucky enough to have my own vineyard, but they grapes are not mature yet, they need 1 more year before fully bearing. So im doing a kit this year to tide me over until next year.

    me again can you supply dried supplies instead of using e bay.also are they any good an can you recommend any to use till fruits an berries are available....

      You can get away with screw caps possibly a couple of times. But you can guarantee a proper seal.

      @@Brewbitz hi again, I've used my screw cap bottles twice now and I wanted to ask you are prosecco type bottles that have a cork held with a wire cage OK to use with regular corks?

      Hi. Usually the corks in prosecco bottles are a larger diameter, so although wine corks may fit, they wont be tight enough.
      Try using new corks and cages and make your wine fizzy

      Hi, I've now bought bottles and corks, but the corks seem to break up a bit during removing, do I need to put the bottles on their side to wet the corks, would that help or have I bought poor quality corks, thanks again

    would the vigorous stirring not cause oxidation in the brew?

      iOpticFibre Hi. You are stirring to cause the dissolved CO2 to be released. You are not stirring to introduce air. That needs a different type of stirring. Hope that makes sense? :)

    How would screw cap bottles work?

      well, if you match the lid with the bottle. and Only a couple of times as the caps tend to loose their airtight seal

    just doing a 6 bottle version of this, still fermenting it looks like mud no idea why.

      Lol. Even sugar wine looks muddy when fermenting. Its all the yeast floating around. Dont worry, it will clear!

    My kit says de gas. Is that not necessary?

      Degassing helps speed up the clearing process, but if you whip in air, it can bring in the bacteria that turn alcohol to vinegar. Weigh up the pros & cons.
