I also make my own nut butters, peanut, hazel, cashew, walnut, almond, pistachio in fact any nuts you can buy. Even my own Nutella! Yummmm!!! That time I heated up my food processor doing an almond and pistachio butter 😂 I had to wait for it to cool down.... Also I manage to keep my nut butters for many weeks on in a simple jam jar. Nuts take time so go bad so nut butter as well. For those having a thick consistency, you can add a little coconut oil (unflavored preferably) to you desire consistency. Works with oil too but the 2 will separate in the jar so you have to mix before use.

I've used a different recipe but the directions are the same. I also had the same problem. In order to get it to that consistency I had to add some olive oil. I just started with a few drops, blended, mixed the mixture to see the consistency and continued until I got the desired consistency...
DIDN'T TURN TO PASTE! I just attempted to make this and my Pistachios turned into a solid dry paste....I had blanched the nuts to remove the shells but perhaps it dried them out!...I added a bunch of grapeseed oil to try and save the paste, hopefully I can still use it to make the Macaroons 🥲

Use it for the filling, mix it with whipped cream or make a pistachio custard with it.

Unless the recipe calls for un-toasted nuts of course, or you're putting them on the outside of cookies before putting them in the oven.
