Well, I know there is an option for tourists to register with Alipay or Wechat Pay, but I honestly don't know how! It was a feature that was released right before the pandemic, and now there are no tourists to try it out and give feedback. But it's not like cash isn't accepted, so don't worry about it too much.
She works or worked in China so she probably has a Chinese bank account. With a Chinese bank account you can connect your account to Alipay or WeChat. If you are a tourist there for a long time. I had one when I lived there for 6 months as a student, it made life easier
