I have used hearts of palm to substitute saltfish in a vegan version of it...and true,add mixed vegetables to it.Geynit in the can,drain out the water and dump it in with the sauteed vegetables.I like to add garlic to everything I cook,go I would saute grated garlic in the mix.

I had an acquaintance from st. lucia who introduced me to this dish. ever since, i have been trying to replicate the recipe. this is pretty close to the way she made it for me and she used frozen thawed mixed vegetables. thank you for sharing this recipe!

the green figs we use are the green bananas sold separately from the yellow bananas in the supermarket. the green plaintains are different but could be used the same way.

I did mine with vegan mayo. Taste just the same.
