I have a suggestion. Use the dull side of the knife to separate the Dhokla from the sides of the aluminium mould. That way you preclude the possibility of scratching the or scraping the mould with the sharp edge of the knife. This is especially helpful tip if you maintain your knives to be ultra sharp like me. I have also experienced concentrated beam of radiation within the microwave oven. Very often this has led to charring /burning of the food at the centre of the rotating plate. In this situation use a non spatter plastic lid / cover over the mould which diffuses the beam and prevents this burning.
